This recipe combines the smoky flavours of roasted plantain (bole) and fish with a spicy and flavoursome stew using Ataro Jollof Sauce to make the peppered stew, a speciality from Rivers State, Nigeria.
Ingredients:
* For the Roasted Bole (Plantain):
ย ย ย ย * 2 ripe plantains (also called bole)
ย ย ย ย * Vegetable oil for brushing
* For the Ataro Jollof Stew & Fish:
ย ย ย ย * 1/4 cup Atarodo (Habanero) pepper (ground or blended)
ย ย ย ย * 1/2 cup palm oil
ย ย ย ย * 1 medium onion, chopped
ย ย ย ย * 2 scotch bonnet peppers, chopped (adjust to your spice preference)
ย ย ย ย * 1 stock cube
ย ย ย ย * 1 tsp salt
ย ย ย ย * 1/2 tsp ground black pepper
ย ย ย ย * 1 bay leaf
ย ย ย ย * 1 cup water
ย ย ย ย * 1 cup of crayfish
Instructions:
1. Prepare the Bole:
ย ย ย ย * Preheat the oven to 200ยฐC (400ยฐF).
ย ย ย ย * Peel the plantains and cut them in half lengthwise.
ย ย ย ย * Brush the plantains with vegetable oil.
ย ย ย ย * Place them on a baking tray and roast for 20-25 minutes, turning them halfway through, until they are golden brown and tender.
2. Make the Ataro Jollof Stew:
ย ย ย ย * Heat palm oil in a pot over medium heat.
ย ย ย ย * Add the chopped onion and cook until softened, about 5 minutes.
ย ย ย ย * Stir in the Ataro pepper and cook for an additional minute, stirring constantly to avoid burning.
ย ย ย ย * Add the chopped scotch bonnet peppers, stock cube, salt, ground black pepper, and bay leaf.
ย ย ย ย * Pour in the water and bring to a boil.
ย ย ย ย * Reduce heat and simmer for 10 minutes, allowing the flavours to meld.
3. Preparing the Fish:
ย ย ย ย * Prepare the fish. Rinse the fish under cold water and pat dry with paper towels.
* Season the fish with salt and pepper to taste.
* Place the fish on the grill and cook for about 5-7 minutes on each side, or until they are cooked through and slightly charred.
4. Assemble and Serve:
ย ย ย ย * Place the roasted bole on a plate and top them with the Ataro Jollof stew and fish.

Italian sausage and tomato stew with pasta using Ataro Jollof Sauce:
Ingredients:
- 1 pound Italian sausage, casing removed
- 1 jar Ataro Jollof Sauce
- Diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces pasta
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions:
1. Heat a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
2. In the same skillet, add a bit of olive oil if needed, then add the chopped onion, minced garlic, and chopped bell pepper. Cook until the vegetables are softened, about 5 minutes.
