Well, I couldn’t bring back all of the Italian feeling, however Italian ice cream and a delicious Tuscan red-wine together with an impromptu salad consisting of lettuce, avocado, spring onion, cherry tomatoes, ham, bacon and hard boiled eggs certainly helped ❤️🇮🇹

The fridge contained a chicken breast, red onion, spring onions, avocado, fresh orange juice and hot mango chutney. I added fresh mint and coriander, ponzu sauce and basmati rice.

Just added sea salt, freshly ground pepper and a premium olive oil.

Sometimes I do surprise myself 😉
I bought a packet of raviolo filled with vegetables and thought of using some pesto and light cream that I knew was in the fridge. All of a sudden I realised that I still had some delicious lemon jam that I bought at Fortnum & Mason in London during Christmas in 2022 ⭐️ I combined everything only to realise I made a new dish and just added some premium Parmesan on top.

I bought another perfect pizza dough and topped it with a tomato based sauce infused with ‘nduja, red onion and a premium mozzarella from the same shop and fresh basil. When baked, I added dried Spanish ham.

Marinated salmon, leg of lamb, two different mousses; potato, celery and parsnips, the other carrot with parsnips, asparagus beans, tomatoes and a sauce to die for. For dessert; caramel mousse, passion fruit cheese cake and strawberries 🍓

I cooked a whole chicken, made mashed potatoes with fresh basil, mint, parsley, low fat milk and butter, seasoned with Maldon salt, freshly ground pepper and nutmeg, accompanied by a small salad; spinach and tomatoes. Topped with black truffle infused balsamic vinegar.

I’ve promised myself never to make lousy shortcuts with pizza anymore 🍕
Luckily I have a wonderful shop in my neighbourhood that sells a perfect ready to use premium pizza dough. I added a mix of tomato sauce with dry and fresh herbs and a spoon full of N’duja, topped with delicious buffalo mozzarella from the same shop, salami, red onion and fresh basil.

Today’s dinner: oven cooked chicken breast seasoned with maldon salt, pepper and thyme accompanied by a sweet potato mash and sautéed spinach with garlic, shallots, fresh basil and crème fraîche. Maldon salt and freshly ground pepper for taste.

Creativity on a Saturday night!
Salmon with a mash made of potatoes, broccoli, garlic, red onion and spring onion, lemon infused olive oil, plain olive oil, some butter and some cream. Seasoned with sea salt, pepper, oregano and dry chili.

Pasta with salmon tonight - just for me 🧡
Ingredients:
70 g of premium dry pasta
Butter
A handful of fresh sugar peas
1 small red onion
1,5 dl fresh cream
1/2 lemon, the juice only
A handful of fresh thyme
125 g fresh salmon cut in dices
A small handful of dried cranberries
Sea salt and pepper
Cook the pasta al dente separately. In a separate pan start searing the onion and sugar peas in butter, add lemon juice, salmon, cream, salt and pepper and fresh thyme. Don’t overcook. Add cranberries and mix everything together with the precooked pasta.

Made of eggs, Italian 00 flour without milk, using fresh orange juice instead 🧡🍊 no sugar, just a pinch of vanilla sugar. Topped with a squeeze of lemon, honey and blueberry jam ( in lack of fresh blueberries 🫐)

Sometimes I surprise myself!
Yesterday I was clearing the fridge after the holidays and concentrated on the various beets, carrots and turnips I had and made a delicious mash using the homemade herb butter I originally made for the lobsters on New Year’s Eve 😋 This accompanied an oven cooked chicken breast. Rowanberry gel for the final touch ❤️
