K-Hill Hangi-Q FINALLY getting some BIIIIIG exposure in the Auckland food scene after 2 years of grinding, early mornings,24 hour work,etc. 😂😂 BUT most importantly, I’ve gotta share a rant with y’all KHHQ WHĀNAU! Whether it was in my fighting days, through my art or even just cooking, WHATEVER I’ve done, I’ve done for the enjoyment-Not fame, Not millions of dollars, just the glory of doing what I love and dedicate my all to. So In saying that, I wanna shout out @matakaifoodie for this review, because she kept it real with the ONLY fame that should ever come off what I do, and THAT glory belongs to the FFN and my home, K-HILL 💯✊🏽 People tend to overlook Te Norta, and if growing up there proves anything, WE CAN DO BETTER than most people WITH LESS! From having THE BADDEST KAIMOANA IN THE WORLD-and after travelling various countries in Europe, that’s no contest 😂😂 We have paddocks filled with meat, and even the resources to garden some of the best veg. Sure we don’t have yum Cha or all the flash restaurants like in Auckland up there, but when we can cook it just as good, if not better, then who the f**k needs that?! Anyway, like I said this is for K-Hill, and take the FFN to the world, and hopefully, with the HUUUGE following this review queen has, now everyone will know the talent the far f**kin north can produce (and hopefully the next ones up home are even better than me 🔥👊🏽🔥) WEEEEE AAAAAAWWWWN!!

NOONE does brisket like us!! Trimmed lightly (us Māoris haaate wasting hinu) and brined for 24 hours to tenderise. Shmacked up in our signature “HĀNGI-Q” brisket rub. Seared over woodfire then smoked on Manuka, pohutukawa and rosemary sprigs for 5-6 hours. Hāngi steamed to perfection, before glazing in the oven grill with our BIG G’S BBQ SAUCE to create layers of AAAAWWWN flava 🔥👊🏽🔥

‼️OUR LAST BROWN PRIDE BASE MARKET FOR 2023: SOUTH AUCKLAND ‼️ Well, although I’ve given the Auckland KHHQ WHĀNAU stick for always getting outdone by the FFN, I guess it worked, because yesterday was a SUCCESS!!! THAT was busier than awanui day, with us pumping out 52 Birria taco plates NON-STOP for 2 hours! 😤😤 Safe to say, the Auckland Whanau enjoyed these ALOT, and we wanna thank EVERYONE OF YOU GUYS who came out or shared us around in support. HĀNGI-Q LAMB SHANKS 😍😍 Marinated for 24 hours in our BIG G’S BBQ SAUCE, seared over woodfire then smoked for 6-7 hours before getting a Hāngi steam therapy sesh for 2 hours, and FINALLY, a pull on the old meat (don’t be a rude cunt if you read it that way 🤪) do it comes off the bone, and she can go in ANYTHING (dumplings, Bao buns, nachos and fried bread burgers…ANYTHING!!) But this weekend, THIS is the secret of our Birria tacos 😤😤

Hāngi-Q style lamb shanks. 12kg worth, hitting that Manuka pohutukawa and rosemary smoke…2 hours in, colours looks AAAAAWWWWN, another 4-5 hours in the smoker then we can get to the “HĀNGI” process 🔥👊🏽🔥

🔥🔥BIG G’S BBQ SAUCE🔥🔥 Our most Famous staple ingredient, we have had people ask us all types of questions: “do you sell the sauce? “What’s the secret?” “Why BIG G’S for the name?” To answer those: • Coconut cream and orange juice are the two secrets. The rest of the sauce, not giving that sh*t away 😜 • No, we do not sell THIS sauce…however, we are in the process of creating a HĀNGI-Q sauce just for sale, so stay tuned. • BIG G’S has two meanings: 1. First time I saw BBQ was a scene from the movie “fried green tomatoes”, and I always wondered what the pitmaster, Big George, BBQ sauce taste like. 2. This reason is very personal and close to me, but I hope that gives a sense of the names importance.
