Ever since I came up on food scenes here in Auckland, I tended to drift away from our “HĀNGI-Q” style ribs platters cause EVERYONE does ribs…BUT NOONE does a Hāngi X BBQ fusion twist on them except us- we are the ONLY one of our kind in the world- and after last weeks stint racking up ribs in the FFN, I realised I ain’t holding back on doing mine cause our ones are in their own category. So, here’s what we got AAAAWWWN:
3x Hāngi-Q style Babyback ribs, 100g homemade Kimchi Slaw, 100g BBQ BEANS, 2x MAMA K-HILL RECIPE REWANA FRIED BREADS.

And because the kutai (mussels) are in a better condition since the last couple months of skinny lil huas, the FFN STYLE MUSSEL CHOWDER showed up too!

Happy Te wiki ō te reo Māori KHHQ Whānau!
Kicking off late, BUT the only way we know how…with Kai (food)- done the K-Hill Styyyyle!
Every Māori language week, we do a K-Hill Hāngi-Q twist on a food favourite, using some or more elements from Māori cuisine and THIS is no exception!
Our Hanawiti Ō rewana pākiki (Rewana bread patty melt) is this years Te wiki o te reo Māori specialty:
Homemade Rewana bread, made using our homemade rewana bug potato starter, baked until fluffy and dense, sliced into sandwich style slices, toasted with homemade horopito (Māori bush pepper) and mānuka honey butter, filled with 2x homekill beef Pattie’s made using 400g of 100% homekill beef mince from our whānau farm, 2x cups BIG G’s BBQ SAUCE, 100g melted butter, horopito and Himalayan salt seasoning, and 1 beaten egg, grilled until medium-well doneness, topped with grilled red onions and garlic, 2x slices of American cheddar (gotta leave one part to those yanks 😜) and press altogether in the sandwich press, until melty, meaty and AAAAAWWWN!
Served with the last of our homemade gherkins, some lazy onion rings, and a Manuka honey and strawberry banana Malt milkshake, and THAT is how we put a Hori-delicious KHHQ Māori twist on a classic American diner special 🔥👊🏽🔥 next time, we’ll do this one Hori grill styyyyle too!

So, we will be running back THIS SATURDAY to some simple Hāngi-Q style Kai.
Our Hāngi-Q style ribs are one-of-a-kind, mixing Hāngi steam techniques, American BBQ flavour and Asian spices and grilling techniques to bring you something AAAAWWN!
Along with our Māori-kiwi/Asian/American inspired side dishes, this is something our OG FFN whanau knoooows is too good to miss!

K-Hill Hāngi-Q Presents: ‼️Yu-Gi-Oh! 25 year anniversary-inspired Hāngi-Q style content cooks‼️

DISH #5: 🥙🧆“The Pharoah”/Yami Yugi’s woodfired falafel plate 🧆🥙
We are NOW 5 dishes deep in the Yu-Gi-Oh! 25 year themed Hāngi-Q style content cooks, and the FIRST woodfired content cook we’ve done in this “series” with NO meat at all!
“The Pharoah”/Yami Yugi/Atem is the alter ego of the series main character, and being an Ancient Egyptian spirit, the fave foods of yugioh characters lists these middle-eastern fried snack food favourites as his no.1 dish.
Putting the KHHQ twist on it, we used Manuka, Pohutukawa and rosemary smoked capsicum along with chickpeas and various other herbs and spices (will be shared in the recipe breakdown to come👀) to make our falafel. First deep fried, then given a light 1 hour smoke over Manuka, pohutukawa and rosemary sprigs, the finished morsels were served 2 ways:
1. On our woodfired rewana (Māori sourdough) pita breads, with Mediterranean salad, black olives, garlic aioli and homemade BIG G’s BBQ MANGO dressing
2. Served on their own with the aioli and BBQ mango dressing.
Final verdict from our other boss (Anna)?? It was AAAAWWWN, even without the meat, and it’s ranked at #2 so far on the YGO HĀNGI-Q content cook creations list. I think the Pharoah would smash this after duelling his arse off, but he ain’t here, so what y’all think KHHQ Whānau??

DISH #4: 🍜🔥TEA GARDNERS WOODFIRE GRILLED CHICKEN RAMEN 🍜 🔥

Following AAAAWWWN with our YGO 25 year themed Hāngi-Q style content cooks: next up in our characters fave foods, The Sole lady in the main group, ‘Tea Gardner’s’ fave dish- Chicken ramen a lá Hāngi-Q styyyyle!
Kawakawa, chilli and sesame oil, kewpie mayo, brown sugar and various spices marinated the chicken for 24 hours BEFORE getting a hit of our Hāngi-Q YGO chicken rub, and getting a smoke n sear over Manuka, Pohutukawa and rosemary sprigs.
The ramen itself: a rich broth made with our BIG G’s BBQ SAUCE, miso broth, chicken stock and some secret flavourings.
Serve both these items with Al denté ramen noodles, “jammy” boiled eggs, spring onion, Housemade pickled carrots, Japanese crab cake and a side dish of kewpie mayo and extra BIG G’s BBQ SAUCE?
Well, MY sole lady (Anna) says THIS is the best YGO content dish to date, and I’m sure the sole lady of Yu-Gi-Oh! Would think so too 🔥👊🏽🔥

DISH #3: 🍱“Grampa” Solomon Muto’s favourite smoked salmon Tamagoyaki omelette 🍱
First off…This WAS and WILL BE the easiest cook in this content creation “series”, BUT it was simply AAAAWWWN!
The salmon- nah, didn’t catch this (the FFN isn’t partial to salmon or trout either 😜), so straight salmon fillet offcuts from the fishmonger, brined for 24 hours in a soy, Marmite and mirin brine, then smoked over pohutukawa, manuka woods and rosemary sprigs-HĀNGI-Q STYYYYYLE!- Then brined again until we used em tonight…
Tamagoyaki- a type of folded Japanese omelette with a sweet and savoury flavour, this one we made sweet and sour with the savoury coming from a Kiwi classic, KIWI ONION SOUP POWDER!
Beat the omelette mix till frothy, then cook in a crepe pan until they are airy and crispy, before we use em to roll up our tamagoyaki mixture.

Definitely something to add to those lighter meal lists, and once again, stay tuned for the recipe breakdown COMING SOON! 👀

Kia Ora and HAPPY SUNDAY (what day is Father’s Day??) KHHQ WHĀNAU! I knoooow this ain’t
“Hāngi-Q” style cooking content, BUT, it’s in relation to us trialling various creations WITH our Rewana bug-bread starter- to bring MORE Hāngi-Q fusion creations in future pop-ups… and seeing as that’s the excuse, why not continue doing stuff NOONE has done yet? Like these Rewana pancakes!! Fluffy and spongy, with a strong fermented tartness that helps it stand up to sweet OR savoury toppings…no ranting, these were AAAAWWWN! 🔥👊🏽🔥

🍞🥔🔥REWANA PARAOA PARAI (Rewana fried bread)🔥🥔🍞

In my opinion, Māori fried bread-or paraoa parai-ain’t got s**t on Rewana Bread (Māori potato sourdough)… HOWEVER, what happens when you mix both?
Fusing the sweet and sour, airy dough of rewana, with the spongy, crispy textures and savoury taste of fried bread= AAAAAAWWWN beyond comprehension 💯🔥😮‍💨😮‍💨
Made to ‘MAMA K-HILL’ fried bread recipe, with the addition of our homemade Rewana “potato bug “(bread starter) and egg washed before frying to give a crisp-shine to the outside, made this one of the BEST fried breads I’ve made!
I think this variant on a KHHQ classic staple would be hella AAAAAWWWN as a switch up on our Hāngi-Q fried bread burgers or platters…what y’all reckon?

DISH #2: Duke Devlin’s Favourite Smoked lap cheong (Chinese sausage) Chinese Fried Noodles 🍜🔥
Re-starting this Content cook series INSPIRED by the favourite dishes of characters from my favourite Anime of all time, and next up, The “ladies man” of the main character crew, Duke Devlin, and his favourite dish (albeit with a Hāngi-Q woodfired twist) Chinese fried noodles with Lap cheong!!
Lap Cheong, or Chinese sausage, is smoked for 1 hour over Manuka, pohutukawa and rosemary sprigs. Alongside twice-smoked Housemade Hāngi-Q bacon, bean sprouts, spring onion, yellow capsicum, red onion, garlic and homemade BIG G’s BBQ lemongrass sticky sauce TOSSED with fresh egg noodles in a stir fry?? I think this elevation of salivation would give the dungeon dice game creator one-hell-of-a-foodgasm 😮‍💨😮‍💨

🍞🥔REWANA BREAD (Māori potato sourdough bread)🥔🍞

Paraoa parai (fried bread) AINT THE ONLY Māori bread…and in my books? THIS paraoa beats fried bread anyday!
Made using a rewana “bug”(fermented bread starter) made from flour, boiled riwai (potatoes), sugar, yeast (not traditional BUT I like adding it to kickstart the process so why the fark not?!!) and a load of sugar. Ferment it, then mix with flour, sugar, salt, butter and warm water. Leave to rise before baking in the oven until Rosen and golden, baste with real butter, then slice into it hot…and FAAARK ME IS IT AAAWWWN! 😮‍💨😮‍💨
If you ever get to try this sour-sweet potatoey, spongey,airy,carb-heavy goodness, make sure it’s HOT & SLAMMED WITH BUTTER!🔥👊🏽🔥

Simple. Yaaarmy as fark. And AAAAAWWWN!
On my mothers side, I am 100000% FFN hori maori, ESPECIALLY in the Kai I cook…BUT my father/ O.G pitmaster at K-Hill Hāngi-Q is my no.1 cooking influence, and one thing his mother/our Nan would make was something from her Irish side: IRISH STEW!
Lamb or mutton, potatoes and a dark stout beer or Guinness with whatever else you want, boil it for aaaages and fark this dish can make Gordon Ramsay kiss his own arse out the door 💯
Served with homemade Rewana bread and REAL butter, that’s an Irish/Māori combo that’ll always be one of my faves 🔥👊🏽🔥

Ever tried a HĀNGI-Q style smoked duck?? Well, if you caught us at yesterdays base market, YOU HAVE NOW!!
First time we did this, was back in 2022 in the FFN, and back then it also included our FFN STYLE MUSSEL CHOWDER, buuuut due to other stalls popping off mussel chowder, that had to be omitted…

STILL, this is AAAAWWWN! Includes: 100g Hāngi-Q style Duck-smoked for 3 hours over Manuka, pohutukawa and rosemary sprigs, Hāngi steamed for 40 minutes, 30 minutes oven roasted before a final oil dousing to get the skin thin n crispy- served with 200g coconut rice, Stir fried bok choy, 100g BBQ BEANS & 2x slices of Manuka & Kawakawa cornbread 😮‍💨

Question is: Do we run this back in 2025?? 🔥👊🏽🔥
