Microgreens are high in nutrients
While it is true leafy greens contain most of the nutrients required to maintain a healthy diet, imagine taking that same food quality and jam-packing into a smaller version. Enter, microgreens. All the important vitamins and minerals found in the larger versions of a vegetable are in the smaller microgreens, as well. Swiss chard is very high in vitamins K, A, and C, but many people do not enjoy its taste. The microgreen version adds a colorful and nutrient-packed punch to any salad. Beets are full of manganese and folate, and beet microgreens can be added to many dishes.

2. A pilot study at the John Hopkins University School of Medicine concluded that regular consumption of microgreens might help people with gastric problems and even assist in preventing stomach cancer.
3. Brassicas in particular (broccoli, cabbage, mustard, rocket, and kale) were linked to cancer prevention. Highest ranking was radish, daikon (Japanese white radish) and broccoli.

Its time too go all out and fill the rack
We started this with 12 trays of different varieties, and adding 4 every 4 days.
They are all in different growing stages and the raddish is definitely the clear winner 😋

Next we did a few trials with growing under lights and hydroponics etc!!
All went well and we enjoyed all of it ourselves straight from tray to plate 😋😋

It all began in lockdown!!🤣
