Winter is definitely here! And what could be better on those wet, cold nights that a warm, delicious rhubarb and apple crumble!π

Ingredients:
Filling:
π4 cups of chopped rhubarb
π1-2 grated apples (leave the skin on)
Topping:
π1.5 cups Amazeballs Vanilla DIY mix
π1 cup coconut thread
π1/2 cup of slivered almonds
π45g (3T) melted butter or coconut oil
Method:
π₯§Preheat oven to 180C
π₯§Mix apple into the rhubarb and place in oven proof dish and bake for 20-30 mins or until rhubarb is soft.
π₯§Turn oven down to 120C
π₯§Mix topping ingredients together and sprinkle on top of cooked fruit then place in the oven for approximately 20mins or until lightly browned and a little crispy.
Serve with whipped cream or yoghurt.

Note: I find adding apple to the rhubarb makes it sweet enough but taste your cooked fruit to see if it is sweet enough for you. Add apple puree, honey or other sweetener to taste if required.

In a world that has prioritised efficiency, ultra-processed foods (which I prefer to call junk) has thrived. To our detriment.β

Ultra-processed foods are those that have been refined repeatedly so that they look nothing like their original source. They are typically high in refined starches or sugars (or artificial sweeteners) and devoid of micronutrients, which your body literally requires to thrive.β

A major metabolic consequence, that influences the effects of the calories from an ultra-processed food, is insulin production. They typically illicit an excessive production of this blood sugar-regulating hormone and instruct the body to store fat and glucose for later. And these days, too many people rely on these fake foods for too many meals and snacks, which too easily leads to the constant elevation of insulin levels, which has become known as insulin resistance.β

Remember that no amount of calorie counting will override insulinβs storage message, even if the ultra-processed βfoodβ is marketed as being low in calories.β
