Are we allowed to talk about Christmas yet???? Pretty bickies are a Christmas thing in many countries. While these aren’t spiced Chrissy bickies they are delish, and fun to make. I call them Jamborees but English friends say they’re like a Jammy Dodger (guessing at spelling). Recipe is below if you want to give ‘em a go. .nz
Jamborees
125g butter or shortening
½ cup sugar
1 ½ cups plain flour
1 egg yolk
Jam for filling
Makes around 15+ filled biscuits depending on size.
Pre heat the oven to 180°C.
Cream the butter and sugar until pale and fluffy. Add the egg yolk and mix well then stir in the flour and mix to a firm dough.
Knead the dough lightly then roll out on a floured surface. Cut into rounds using a 5 cm cutter. Use a smaller cutter to remove the centres from ½ the biscuits. Place on greased baking trays and bake for 10 – 15 minutes until lightly golden.
Remove from trays and when cool spread the ½ biscuits with jam, top with the biscuits that have no centres and dust lightly with icing sugar.
Cooks Tip: If cutting delicate shapes and narrow edges, watch the cooking carefully so they don’t burn and take extra care when removing from the tray as they will be fragile.
