Dough:
2 cups gluten-free self-raising flour
3/4 cup of non-dairy milk of choice
1 pinch salt
100 g vegan butter - diced & cold
Filling:
1 packet Kea Cookies Mini Choc Cookies filled with Vanilla Icing
100g vegan butter - room temp
Icing:
3/4 cup icing sugar
Boiling water
Preheat oven to 180 degrees.
Grab a large bowl and place a sieve on top. Add gluten-free self-raising flour and salt and sieve through. Add the cubed vegan butter to the bowl and use your fingertips to press the butter into the flour and keep doing so until it's combined. Add milk and mix with the dry ingredients using a spoon. Once the wet and dry ingredients combine into a dough, knead the dough on a lightly floured chopping board or bench. Knead until the dough looks relatively smooth. If the mixture is still sticky or wet, add more flour.
Do another sprinkle of flour over the bench or chopping board and using a rolling pin or wine bottle to roll out the dough until it is about 1/2 cm thick.
For the filling, place the butter into a small bowl and chuck it in the microwave for a few seconds or until it's soft (not melted). Chuck Kea Cookies Mini Choc Cookies filled with Vanilla Icing into a Nutri Bullet and blitz until smooth. Reserve a little bit to sprinkle on the rolls once they are out of the oven. Add the crumbed Kea Cookies to the softened butter and stir until you have a thick paste.
Brush this paste all over the dough. You should have a generous layer of it.
Cut the dough into six strips using a sharp knife and roll, starting from the end closest to you. Place the scrolls onto a lined and greased baking dish. Use a relatively small baking dish so that when the scrolls expand, they join each other and touch the sides of the baking dish. Whack into the oven for 25-30 mins or until they have puffed up beautifully and are golden brown. The house should smell divine!
For the icing, boil the jug. Add the icing sugar to a bowl with a couple of tablespoons of boiling water and whisk until combined. The consistency should be thick but almost runny. Keep adding water until you reach the perfect consistency. Drizzle all over the scrolls and sprinkles over the Kea Cookie crumbs.
