“Whatever-The-heck-you-have-in-the-fridge-frittata” 😆👊💥🙃

One of my favourites.

Bottom right shows the “base” mix - four eggs, . I added a tin of tomatoes and black beans, grated carrot, garlic and my favourite sauces.

Put bacon and muchroom in quiche dish first, poured over the base mix and topped with bbq sauce. Tasty, filling, and per quarter serve = 315 cals. Soul Food right there!

Covid is keeping the Soul Food side of life quiet at the moment. But I always enjoy a good excuse to get busy in the kitchen. Today is my daughters birthday. I enjoyed making a caramel slice recipe into a cake and making it super beautiful for a beautiful young lady. Presentation ✅ AND taste ✅

11 hearty serves of bacon hock and vege soup.
Getting prepared for the weeks ahead. AND reuse, recycle and reduce.
Putting Kai away for the next few weeks so I’m not caught unprepared and needing to reach for something that doesn’t serve my body.
And for my own use, I wash and reuse containers rather than buying new as much as possible. 9 serves will be frozen.

This massaman beef curry is one of my favourite go to’s for being prepped for the week. I’ll get 6 serves out of this. I’ll have it in a wrap, on a layer of rice or with a side of fresh beans. Yum!

Taking a baking break today. I had fomo with lockdown loaf. So here’s my version Chelsea Winter. So delicious. I’d say it’s almost sconelike. I topped mine with dried mixed herbs, paprika, olives and cheese. 40 minutes later voila!!

Resourceful cooking. Check out what’s already in your fridge and pantry and make it work.

I had a heap of autumn veges. Top shelf made a roast pumpkin and carrot soup (5 serves at 171 cal each) and bottom shelf - roasted veges (3 serves at 319 cal each).

No need for unnecessary outings in lockdown, nor poor food choices when hungry or bored.

I managed to delete my recent post, so here tis again! Busy time in the kitchen but really happy with the outcome. One devine pot of thick, hearty, vege soup. It made 12 serves at 262 calories per serve. And a tender roast beef cooked in gravy making 6 serves at 288 calories per serve. Just yum!

And for tomorrow’s Matariki shared Kai at work, I’ve made gluten free brownie bites. At just under 200 cals per bite (12 in a batch) it’s a healthier option than a stop off at the grocery store or bakery on the way to work.

Eating well doesn’t mean boring food. It’s making mindful choices every time of what you are consuming (yes drinks and snacks included!). Does this serve me? How can I make this work for me?

Often portion control is the big answer. I weigh and count everything because im a terrible guesser! If you are gaining weight and don’t want to be, feel free to flick me a PM for some simple tips and tricks.

So today’s lunch is plum jam protein powder pancakes = 283 cals. Sugar free maple syrup = 18 cals per 35mL! Just yum! And filling.

Health conscious even with baking!
I know date scones are not on the menu. But when I make home baked goodies, I can portion control, I can sub in healthier ingredients and it’s not guess work like it would be if I bought from a cafe.

Same idea with the food that is on the menu. Healthy takeaways! You can see what ingredients and calories are in the meals I make. Whereas buying takeaways is guess work.

I portion control and freeze my meals. Easy, healthy takeaways in your freezer. Ready to reheat and eat on busy days.

Roast beef part two.

So this is how the kg of roast beef turned out. Totally delish.

Two wraps for my dinner last night, coming in at a hellishly reasonable 666 calories. And no that wasn’t rigged!

Roast beef.

So tender and delicious. Cooked in my slow cooker, covered in gravy mix so it creates its own gravy.

What’s my trick? Perfect timing and attention. I turn it and squeeze it often to get those yummy juices into the meat, to make sure it’s cooked to perfection and doesn’t go dry.

I know many don’t have the luxury of time and attention to cooking. I do. So if you need help, sing out! PM or txt with your order.

I love this in wraps with a handful of cheese and whatever else is in the fridge. No sauces needed. Or I put in a tray of pre-prepped roast veges. Alternatively you could pick up a bag of frozen roasties and mixed vege on the way to picking up your order. Put them on when you walk in the door and by the time you get changed your hot, healthy, filling and delicious dinner will be ready.

Thank goodness for frozen meals! When I cook my slow cooker meals for myself, I split them into 6 portions and often freeze a few. On cold unmotivated nights like tonight, a quick defrost and 2 minute cook and my dinner is ready.

This is the Country Chicken Casserole. Super yum!

$25 a full batch with 1 kg chicken drummies, or $5 per serve.
