Happy International Meatball day! To celebrate, we have got a beautiful recipe here from our fav Yotam Ottolenghi. A truly new spin on an old school dinner staple! π Beef Meatballs with Broad Beans and Lemon...
π 4Β½ tbsp olive oil
π 350g broad beans, fresh or frozen
π 4 whole thyme sprigs
π 6 garlic cloves, sliced
π 8 spring onions, cut at an angle into 2cm segments
π 2Β½ tbsp lemon juice
π 500ml chicken stock
π salt and black pepper
For the meatballs:
π 300g minced beef
π 150g minced lamb
π 1 medium onion, finely chopped
π 120g breadcrumbs
π 2 tbsp each chopped flat-leaf parsley, mint, dill and coriander, plus Β½ tbsp extra of each to finish the dish
π 2 large garlic cloves, crushed
π 1 tbsp baharat spice mix (link to this in comments)
π 1 tbsp ground cumin
π 2 tsp capers, chopped
π 1 egg, beaten
Method:
π§ Place all of the meatball ingredients in a large mixing bowl. Add ΒΎ teaspoon of salt and plenty of black pepper and mix well with your hands. Form into balls about the same size as ping-pong balls. Heat 1 tablespoon of the olive oil in an extra-large frying pan for which you have a lid. Sear half the meatballs over a medium heat, turning them until they are brown all over, about 5 minutes. Remove, add another Β½ tablespoon of olive oil to the pan and cook the other batch of meatballs. Remove from the pan and wipe it clean.
π§ While the meatballs are cooking, throw the broad beans into a pot with plenty of salted boiling water and blanch for 2 minutes. Drain and refresh under cold water. Remove the skins from half the broad beans and discard the shells.
π§ Heat the remaining olive oil in the same pan in which you seared the meatballs. Add the thyme, garlic and spring onion and sautΓ© over a medium heat for 3 minutes. Add the unshelled broad beans, 1Β½ tablespoons of the lemon juice, 80ml of the stock, ΒΌ teaspoon of salt and plenty of black pepper. The beans should be almost covered with liquid. Cover the pan and cook over a low heat for 10 minutes.

What you need:
4 - 5 tablespoons olive oil
1 teaspoon herbs de provence (mixed dried herbs)
1 teaspoon minced garlic
1 teaspoon fresh chopped parsley
1/2 teaspoon chilli flakes
1/2 teaspoon coarse/flaky salt
2 teaspoons balsamic vinegar
Pour olive oil into a small serving bowl or plate. Add herbs de provence, garlic, parsley, red pepper flakes and salt.
Before serving, drizzle balsamic vinegar into the bowl. Serve with crusty bread. π₯
