Happy International Meatball day! To celebrate, we have got a beautiful recipe here from our fav Yotam Ottolenghi. A truly new spin on an old school dinner staple! 🍝 Beef Meatballs with Broad Beans and Lemon...

πŸ‘‰ 4Β½ tbsp olive oil
πŸ‘‰ 350g broad beans, fresh or frozen
πŸ‘‰ 4 whole thyme sprigs
πŸ‘‰ 6 garlic cloves, sliced
πŸ‘‰ 8 spring onions, cut at an angle into 2cm segments
πŸ‘‰ 2Β½ tbsp lemon juice
πŸ‘‰ 500ml chicken stock
πŸ‘‰ salt and black pepper

For the meatballs:
πŸ‘‰ 300g minced beef
πŸ‘‰ 150g minced lamb
πŸ‘‰ 1 medium onion, finely chopped
πŸ‘‰ 120g breadcrumbs
πŸ‘‰ 2 tbsp each chopped flat-leaf parsley, mint, dill and coriander, plus Β½ tbsp extra of each to finish the dish
πŸ‘‰ 2 large garlic cloves, crushed
πŸ‘‰ 1 tbsp baharat spice mix (link to this in comments)
πŸ‘‰ 1 tbsp ground cumin
πŸ‘‰ 2 tsp capers, chopped
πŸ‘‰ 1 egg, beaten

Method:

πŸ§† Place all of the meatball ingredients in a large mixing bowl. Add ΒΎ teaspoon of salt and plenty of black pepper and mix well with your hands. Form into balls about the same size as ping-pong balls. Heat 1 tablespoon of the olive oil in an extra-large frying pan for which you have a lid. Sear half the meatballs over a medium heat, turning them until they are brown all over, about 5 minutes. Remove, add another Β½ tablespoon of olive oil to the pan and cook the other batch of meatballs. Remove from the pan and wipe it clean.

πŸ§† While the meatballs are cooking, throw the broad beans into a pot with plenty of salted boiling water and blanch for 2 minutes. Drain and refresh under cold water. Remove the skins from half the broad beans and discard the shells.

πŸ§† Heat the remaining olive oil in the same pan in which you seared the meatballs. Add the thyme, garlic and spring onion and sautΓ© over a medium heat for 3 minutes. Add the unshelled broad beans, 1Β½ tablespoons of the lemon juice, 80ml of the stock, ΒΌ teaspoon of salt and plenty of black pepper. The beans should be almost covered with liquid. Cover the pan and cook over a low heat for 10 minutes.

In a rush but want to impress your guests? This scrumptious seasoned olive dipping oil recipe is the one for you! πŸ™Œ

What you need:
4 - 5 tablespoons olive oil
1 teaspoon herbs de provence (mixed dried herbs)
1 teaspoon minced garlic
1 teaspoon fresh chopped parsley
1/2 teaspoon chilli flakes
1/2 teaspoon coarse/flaky salt
2 teaspoons balsamic vinegar

Pour olive oil into a small serving bowl or plate. Add herbs de provence, garlic, parsley, red pepper flakes and salt.
Before serving, drizzle balsamic vinegar into the bowl. Serve with crusty bread. πŸ₯–
