Over the next 10 weeks we are going to cover some less known steaks that we do under the banner of BBQ cuts in our cutting list.
First up is the Oyster steak or Spider steak, an old school cut that's got a lot of flavour with a good amount of intramuscular fat. There are two small steaks per beef, it's a nice quick fry/bbq.
Xmas must be close, after 8hrs we got 13 dressed and in the chiller, lots hams and bacon to come :)

WOW that was a winter I would be happy not to go through that again,a big ups to all the farmers and block owners it was not easy, but spring is here, its still wet but grass is growing.
If you like any home Kill before Xmas i recommend book in ASAP as we are running out of spots fast.

Something a bit different dropped off last night. 3 blue fin tuna and 1 very big albacore. Cut into steaks for fresh and smoked fish.
Beautiful winters day in the mighty Waikato. Big day at Hinterland, first time AI for some of our pedigree heifers. The bull has been running with the cows for two weeks now. Fingers X for a good autumn calfing next year.
