Did you know garlic needs at least 6 weeks of chilly weather for maximum bulb development and can withstand a frost and temperatures down to -34 C!?!? My early purple are up already…well ahead of the other varieties but planted at the same time. Love to see things growing through the winter season. 🩷🧄

I’ve planted all that I can fit so if anyone wants my garlic seed leftovers pm me. Quantity as picture here-4 varieties: early purple, marbled purple stripe, ajo rojo and elephant garlic. $60 for everything here! Great for the hobbyist wanting to give garlic growing ago.

Creative chefs-Did you know you can eat the roots of garlic?
Nutritional Value
Garlic roots contain allicin, a compound shown to reduce inflammation and provide antibacterial and antifungal properties. Like the bulbs, the roots are also a source of fiber to stimulate the digestive tract, magnesium to regulate blood pressure, and vitamin C to strengthen the immune system.
Applications
Garlic roots contain a mild, sweet, and subtly spicy flavor well suited for both fresh and cooked applications such as frying, sautéing, and stir-frying. When raw, the roots can be incorporated into green salads, layered into sandwiches for added crunch, or utilized as a fresh topping over hummus, guacamole, vegetables, pasta salads, and grain bowls. Garlic roots can also be infused into oils for a light flavoring, or they can be pickled as a tangy condiment. In addition to raw preparations, Garlic roots can be lightly sauteed with other vegetables as a savory side dish, browned in butter and served with seafood, stirred into soups, or mixed into legume, potato, or pasta dishes. The roots can also be cooked into eggs, stir-fried into main dishes, fried to develop a crisp texture, or tossed in as a finishing touch in noodles and rice-based dishes. The long, delicate roots add elevated visual and textural components into dishes, providing an artistic, abstract element. Garlic roots may also still be attached to the young bulb and greens. The entire stalk with the roots can be cleaned and combined into sauces and used as a flavoring. Garlic roots pair well with spring vegetables such as asparagus, morels, green herbs, peas, fava beans, leeks, and fiddlehead ferns, other mushrooms, Brussel sprouts, beets, ginger, tofu, and seafood such as scallops, fish, prawns, and mussels. Fresh Garlic roots will keep 2 to 7 days, depending on freshness, when wrapped in a paper towel and stored in a sealed container in the refrigerator.

Woohoo a GOOD healthy size. It’s so nice to see my MPS come up and out of the ground and every year it’s the same surprise. Being spray free and in the lower north island, I have my growing challenges but every year there is a happy dance as my beginning was meager indeed. I save my biggest healthiest plants for seed and that is why the crop is forever improving. My Marbled Purple Stripe is being harvested today with the help of my lovely girls. I hope they one day carry on the family tradition.

Garlic scapes are the long tender stems that grow from the center of hard-necked garlic. I remove the scape so the garlic bulb can grow larger before harvest. Scapes are an early-season gift for garlic lovers, with a flavor of onions, garlic, and scallions—an ideal three-in-one addition for savory recipes. Once you try scapes, they will become a new favorite allium. Garlic pesto or just grilled in butter are my favourite ways to eat them. Yummy!!! Get yours quick as the season is quite short. I caved to my childrens PLEES for a puppy. New helper on the farm. We are loving her to bits. Just a heads up…..the garlic scapes are just shooting up now. 2-3 weeks. Don’t delay with your preorders if you want some of this seasonal delicacy. I go out of my way to pick it fresh to complete each order. Makes the BEST pesto..just saying 🧄🌱

What do I do when I am not growing garlic?? Acorn flour has been on my to do list for a couple of years and with 2 trees laden with acorns, there was no better time than now. Here’s some pics from this time heavy process. 🐿

Black garlic is produced by allowing regular garlic to age in a controlled temperature and humidity for three to four weeks. This allows it to undergo the Maaaaaaaaillard reaction, a chemical process that occurs between amino acids and reducing sugars. A sort of “fermentation” but it’s not. Improves heart health, lowers cholesterol, preserves cognitive function, fights cancer, stabilises blood sugar and boosts immunity. I’m calling this my families health insurance policy and it’s one of the driving forces why I grow garlic.

Meal from the eve of 2023. Garlic and rosemary herbed lamb.
Recipe:handful of rosemary, half cup of olive oil, 1 large head of garlic, teaspoon of salt, teaspoon or pepper, squeeze the juice of 1/2 lemon. Blitz in the Nutri bullet. Cover leg of lamb entirely. Cook at 180 for 2.5hrs in a roasting dish.
