Txoko delivers bespoke catering and dining experiences in the South Wairarapa region, showcasing local produce, wine, beverages and other artisan products.
I stumbled across this photo from the very first Txoko pop up I did for a select few in July last year, over a year on and many dinners later it’s time to announce the next part of my adventure, this weekend will be the last of my On Giants Shoulders pop ups and Txoko will be going into hibernation. My new role is to be General Manager at Karahui ( the old wine bank ) here in Martinborough with a heavy focus on curation of the food and wine offerings and a oversight of service and operations. You will still see me in the kitchen quite a bit. I finally wanted to give my biggest thanks to all the people who have showed me such support over the last 18 months and finally Gabe and Braden for enabling me to get this venture off the ground and the continued use of your space I am forever grateful. A big thanks to for the kind write up in the latest Spring Edition , unfortunately with level 2 all mixed group dinners are on hold due to social distancing requirements but I am still catering for private groups, some more exciting news on the horizon for me coming up.

Wine and food are enjoyed with our eyes, taste and smell. We are eliminating the sense of sight in a tasting of four-small illusory plates served with eight wines in black glassware.
Jonathan Hobden of Txoko will upend expectation of flavour and appearance, crafting a unique sensory experience. Each of the four plates will be matched with two double-blind wines, without the visual clues that guide us.
Allow your sense of taste and smell take the lead, and experience how sight can change your perceptions.

What is Txoko ?
Txoko is pronounced chocko ( think chocolate without the late on the end ) and Is borrowed from the name given to the Spanish Gastronomic Societies

I chose the name as I want to create boutique and unique dining experiences often for small groups here in Martinborough.
Why is it unique ?
With Txoko Catering & Hospitality i personally do all the food research, menu planning, preparation and final cooking.
I also research all the wines that I serve at my events along with all the food & wine matching. I also host and serve at all my events.
What I love about Txoko is the ability to bring you a diverse range of menu items inspired by many different cuisines and trends. I can also scower the local and international wine world to bring you premium and lesser known wines you are unlikely to find on many wine lists.
The pop ups are a great place to meet other foodies and wine lovers with great chat at the table, also the perfect environment for a private dinner with friends or family.
My current pop ups (until the end of July) are currently all sold out but if you want to hold a private function at On Giants Shoulders or a dinner party at your home then please get in touch.

Next up for the Volcanic Wines Dinner this Friday is this sweet number from the beautiful red volcanic slates of the Urziger Wurtzgarten ( Spice Garden of Urzig )
Not quite sure how I managed to pick up a 2010 vintage suffice to say after tasting an 2018 from a different producer I’m very excited to try this.

Highlighting the wines for the upcoming Volcanic wines dinner this coming Friday is the 2018 Domain Schoffit Rangen De Thann Grand Cru.
The Rangen is well worth a Google and is an absolutely stunning site in the south of Alsace, super steep, south facing and its wines really give you a hit from its volcanic mineral rich soil.
This Pinot Gris is no exception whilst being relatively young it still drinks well , the balance in this wine is really impressive. The ripeness, acidity and salty gunpowder minerality just sing together. Still some seats available.
Due to other commitments this week there won’t be a pop in lunch tomorrow, hope to continue this next week 🙂
