As a part of the Portlander staff highlight, Nimisha Chaskar (Portlander Chef de Partie) introduces a delightful new dish inspired by her beloved hometown: The Crispy Semolina Fried Gurnard with ‘Malvani’ curry, pickled daikon, and coriander cress.
"This dish reflects the flavours of my city," Nimisha explains. "You'll find variations of this dish all over Mumbai, and this is my personal twist on it."
Combining a simple fried fish with a spicy and tangy curry, this creation holds a special place in Nimisha's heart—it's her ultimate comfort food. On her days off, Nimisha prepares this dish, enjoying it before a well-deserved nap in true comfort food style.

Introducing Nimisha Chaskar, Chef de Partie at Portlander restaurant, Rydges Wellington.
Originally from Mumbai, Maharashtra, Nimisha grew up in a large family that cherished good food. "I've been cooking since I was 12," she recalls.
"I was always curious about what my Mum was making in the kitchen, sneaking tastes whenever I could."
This early exposure sparked Nimisha's passion for cooking, seeing food as a way to bring people together. "Food is all about community," she emphasises. "I love feeding people and seeing the smiles on their faces—it makes my job worth it."
Nimisha's journey reflects her belief in the power of food to create happiness and connection.
