Did you know that baking soda and baking powder are different, and you cannot substitute one for the other?

Baking soda (bicarbonate of soda, sodium bicarbonate) is a base.
Going back to chemistry class, a base will have a chemical reaction when mixed with acid. Remember that baking soda and vinegar volcano experiment? That's the same chemical reaction we need in baking.
You may notice that when a recipe has baking soda in it, there is also an acid (lemon, yogurt, buttermilk, honey, vinegar, etc.) which will then create carbon dioxide allowing the baked goods to rise.

Baking powder, on the other hand, is already a mixture of baking soda (base) and cream of tartar (acid).
This is usually used in recipes without acidic ingredients.

Sometimes, you may see both baking soda and baking powder in a recipe. This is usually the case when the acid and baking soda might not be enough to make the baked goods rise. Increasing the amount of the acidic ingredient might affect the flavor, so instead, the additional baking powder will do the work.
