Our lemonade didn't fly as expected from yesterday's weekend market, but after having today's lunch we had a glass of lemonade from the same batch and noticed it was serving up real SPARKLY mouthfeels. 😳✨

Didn't even get to clean up at our table, πŸ€Έβ€β™€οΈ rushing to consult Google about what the fizz is happening. Turns out, we just accidentally made Sima (a Finnish fermented lemonade).

Traditionally, it is a form of mead bc recipes call for honey. But brown sugar works just as fine. The mixture can also be fermented only for the carbonation, and not the alcohol. So kids can also enjoy the drink.

As for our case, the lemonade mixture we made is way off from the traditional recipe for Sima. But for this to happen to our lemonade, we could only narrow it down to the traces of scoby (from the kombucha ladel) getting into the lemonade, --might've switched ladels in between serving glasses at the market. Whoops! πŸ˜…

Just a storey below .muna, the production of for Vino de Baler takes place in another corner of our home, the kitchen.

Vino de Baler offers a variety of fruit wine made from the seasonal yield of Aurora Province.

We actually started making our wines for personal consumption but the crazy shift into the new normal shaped new perspectives on life. As we drank most of first batch, we then decided to part what little joy we find in consuming fruits in wine form. ✨

Some fruits we already had an experience blowing up in our kitchen bc of the process were pinya, papaya, guyabano, santol (from our friends .ph), seΓ±orita banana, saba, and langka.

And we , humble stewards of the Yeast, take it as our duty to clean the mess up.
