Sai Ua is a grilled pork sausage made with Thai herbs like galangal, lemongrass, kaffir lime, and Thai chili; and red curry paste — all coming together to give it that herby, zesty, spicy, savory flavor.
Some common companions to this dish: sticky rice, naam phrik num (green chile dip) for that added heat kick, and khaep muu (pig skin, or chicharon as we know it).

Meet Chef Gelo: The beating heart of Chiang Mai Superstar
Gelo’s journey is as unique as the flavors he brings to the table. Hailing from San Francisco then Manila, he’s now made Davao his home. His mission? To invite you to rediscover Thai food by way of Chiang Mai.
Much like his culinary idol, Andy Ricker of the Pok Pok restaurant empire, Gelo took the road less traveled to the kitchen. After graduating with a degree in 3D Animation, he spent years in the corporate world until he finally took the leap of faith to follow his true passion: FOOD.
Once free from the 9-to-5, Gelo bought a one-way ticket to Southeast Asia where he backpacked through Vietnam, Cambodia, Laos, Myanmar and Thailand, until making his way to Manila, where he began cooking the food from his travels. His love for Northern Thai cuisine has taken him on many life-changing trips to Thailand, where he immerses himself in the culture and food to bring authentic flavors to every dish he makes.
