What's in the tamales?
For me, personally, the tamales is power-packed-food-on-the-go, made in such a way that a palm-sized banana leaf wrapped pack would have the nourishment you need on a busy day. Its like a full breakfast meal in 6 delectable bites.
The tamales is an assembly in three parts: the white dough, the flavored orange dough, and the topping mix.
The white dough is made from rice flour flavored with coconut milk, sauteed onions, salt and pepper. The white dough is like the base of our meal.
The orange dough has part of the white dough, peanut sauce, more coconut milk, shredded chicken meat sauteed in onions and garlic, salt and pepper to taste. The coloring comes from annatto seed water.
The toppings include egg, ground peanuts and an assortment of meats you could choose from - chicken meat, ham slices, chorizo, longanisa or even tapa and adobo. Over the past month we have enjoyed experimenting on these variations so you can have the taste of breakfast just the way you would have it.

Broth: Boil a whole chicken, chorizo slices, liver with one whole red onion and salt. Note: in my experience boiling a whole chicken whole without cutting it into small pieces produces a tasty, balanced (not too oily, not too bland) broth and the tenderest chicken meat. In the same light, put in the whole onion whole, just peel off the outermost layer, but leave the next layers of dry onion. Chicken liver can be boiled with the other meats, but when using pork liver, put this in last. When meats are done, remove the meats and strain the soup. Add seasoning (ground black pepoer and one chicken bullion). Reduce as necessary. Normally, if you boil the meats long enough, reducing the broth is not necessary.
Add shredded chicken, chorizo and liver pieces, miki noodles, squash slices, set to boil until cooked. Add pepper, salt, sugar to taste. Sometimes I add a few slivers of ginger depending on my mood. Thicken soup with corn starch. Add in pechay leaves when soup boils, just before turning off the heat.
Assembly/ plating: In a bowl, whether in a serving bowl or individual bowls, put in julienne cut onion leeks first before pouring in the hot soup. After that, pour in the noodles, meat pieces and veggies. Garnish with crispy chicharon, crushed peanuts and one egg.

Home cooking is different when you make a business out of it. No matter how you try to be faithful to traditions, adjustments need to be made to balance taste preferences and maintain food quality.
I've been wondering why the kapampangan morcon is rarely sold outside restaurants. Until now. Fresh tomatoes don't mix well with meat. But that is what distinguishes the morcon from the regular embotido. At home you can eat it straight from the first cooking.
Extra steps we had to take to make sure our morcon is safe:
✅ freeze meat
✅ clean meat in brine
✅ cure meat overnight
✅ work meat in temperatures below 10 degrees C. Which means working over a bowl of ice, letting the meat stand in the chiller, and constantly dipping my hands in ice water.
✅ phosphate binder (less than 0.25%) to keep the meat from reacting with the tomato's acids.
✅ pre cook (saute) the tomato salsa
✅ freeze the cooked embotido, while waiting delivery.
✅ if customer wants a heated dish, then reheat just before delivery in tomato salsa.
These steps take 3 days to complete.
Day 1: Freeze
Day 2: Cure
Day 3: Assemble and cook
And reheating in sauce is an additional step to the above.
All these ensure we don't get into bad accidents.
The morcon will be available again next week in limited quantities.

Unlike the usual meat roll, this version has seasoned ground meat rolled around a core of chorizo, egg and cheese. It is not called embotido because it's more savory than sweet, rather, it is packed with a mix of flavors and textures that's in the typical Spanish morcon. Our dish comes with a tomato sarsiado gravy flavored from its own drippings. And is available chilled and packed in foil or warm and ready to eat in a plastic tub.

My Father's Day Treat
My father was orphaned when he was young. And so his aunts took turns taking care of him. One of his favorite recollections was those early mornings when he wakes up before dawn. He would be told "Bliss, go wait for the fresh milk dealer outside, and buy a bottle". Those were magic words that would send him rushing out, because he knows he'll get his sweet treat, the "tibok tibok". Much like the Maja Blanca, but not quite. Because this jello like delicacy has the rich, creamy taste of fresh carabao's milk and a heavier texture that's somewhere in between Maja Blanca and bibinka.

I used to prepare this for Tatay as his special treat during dialysis, because that was the only time he could have some when his kidneys started to fail. (Dairy products were prohibited for him.) That was the season he became picky with his food, wanting more of the food of his childhood. And how I came to know how to make them. He would critique my cooking, telling me it should look, taste, smell and feel a certain way. That was also the time I realized my father could cook, and cook very well.
This sums up the story around Blissful Days. The foods he craved for. And those days of waiting and hoping for an answer. Days of clinging on to God in prayer. Days of choosing gratitude and love. Yet bliss covered those days, for we knew that whatever the outcome, we were present, and God was present in our midst.
Thank you to all neighbors who were so fast to reserve this on our trial run. Although it was a bit expensive because of the cost of fresh carabao's milk in Los Baños. And we could only make so much kaya ubos agad. We will be looking at variants to lower the cost, make it affordable to more. Stay tuned for updates on our kitchen innovations.
Morcon or embotido? The debate continues. Its ground meat (usually a combination of beef and pork) rolled in "ampelya" a thin film lining the pig's intestine. The giveaway in the debate is the rekado of egg, cheese and chorizo in the center which is wrapped with ground meat. That's why it's called morcon. And the savory sauce made from the morcon's own drippings.

Deliveries made yesterday! Thanks for continued patronage. Really, really, for a newbie in food like me, this community is awesome.
You may have noticed a change in the Tamales and Buro. We realized people were buying our products for consumption later, which was not my original intent. I grew up with as aunties who buy them fresh in the market at dawn then I would devour on it immediately for breakfast.
For the tamales, it's a lot more tasty and soft. This is because we made some changes to improve shelf life and keeping quality.
✅ We added vinegar to break down the starch. ✅ We are also now using pasteurized coconut milk.
✅ We upped the salt, sugar and pepper to offset the sour taste of the vinegar.
✅ We doubled the cooking time to 1hr 30 minutes (previous was 40 minutes). And continuous steaming until just before delivery. (Which was why we could not deliver as early as promised).
For the Buro, we are attempting for longer storage life:
✅We used more salt
✅Added glutenous starch midway of fermentation.
This week in our test kitchen, we'll be trying out morcon kapampangan. Please watch out for that next.
We will not be getting orders for Saturday, as there will be more experimentation in the kitchen. But our outputs for this next week and Saturday (for the buro) will be FREE for willing taste testers. This is for those who have bought from us in the past (for honest comments and comparison). Yung mga taga malapit lang po..(pleasant, collegeville) so I don't have to spend on transportation. Or you can pick up samples at the house. Limited stocks lang po kme this week (1 dozen buro, 1 dozen tamales). PM me if interested to taste test.

STORING THE TAMALES
The key ingredients of our tamales dough are rice flour, coconut milk and ground peanuts. The dough is precooked, assembled with other ingredients then steamed between 120-140°C for 40 minutes.
We deliver them to our customers warm and within the hour of cooking. Since some customers have been storing tamales for consumption later in the week, we advise the following:
Depending on room temperatures and relative humidity, the tamales keeps well in room temp within 4-6 hours after cooking. However, for food safety, please reference shelf life to cooked rice with the following prescriptions:
✅At room temperature: max 2 hours at 28-30°C
✅Refrigerator shelf: 4-6 days at max 10°C (refrigerate immediately within 2 hours of delivery).
✅Freezer: constantly at -4-0°C in an air tight container and it will keep for months. To serve, thaw the tamales then reheat in a steamer until soft.

Buro (fermented) is fermented rice, mixed with either shrimp or fish. There are two variants of this: Burong Asan (Fish) and Balò balò (shrimp).
Tamales or Boboto (in kapampangan) is a savory rice cake flavored with coconut milk and peanut sauce and topped with meat and boiled eggs.

Tamales is originally a Mexican dish made of rice flour base, can be topped with meat and salted egg. A complete meal, it can be served for breakfast and dinner. The Tamales to Kapampangans is a dish we learned from Mexicans. It is sometimes called Boboto which means to vote. According to some kapampangan trivias, this dish was inspired by women who were left at home while the men went out and voted. They would gather and make this kakanin.
The Kapampangan Tamales is made of steamed rice flour seasoned with peanuts and palabok, sauce topped with egg and shredded chicken.

Burong Hipon (a.k.a. Balò Balò) is a popular Pampango sauce made of with fermented rice and shrimps. Its sharp and acidic taste gives a delightfully salty and sour sensation in the tongue, much like green mangoes, guaranteed to leave you craving for more. This goes well with grilled fish, boiled eggplant, okra and ampalaya.
Our buro was patiently fermented for a week, then afterwards sauteed in ginger, tomatoes garlic and onions.
Also available is Burong Asan which is fermented rice with fish.
