Kalderetang Kambing

Ingredients

2 pounds goat meat cut into serving portions
2 cups vinegar
1 tablespoon salt
water
2 cups pineapple juice
1/4 cup canola oil
2 medium potatoes, peeled and quartered
1 large carrot, peeled and cut into cubes
1/2 red bell pepper seeded, cored and cubed
1/2 green bell pepper seeded, cored and cubed
1 onion, peeled and chopped
3 cloves garlic, peeled and minced
2 to 3 Thai chili peppers, stemmed and minced
2 cups tomato sauce
1/2 cup liver spread
4 to 5 pieces sweet gherkins pickles
1/4 cup Spanish olives
salt and pepper to taste

Instructions

1 In a large bowl, combine goat meat, vinegar, and 1 tablespoon salt. Marinate in the refrigerator for about 1 hour. Rinse meat and drain well.
2 In a pot over medium heat, bring to a boil enough water to cover the meat. Add goat meat and boil for about 7 to 10 minutes or until scum begins to rise. In a colander, drain goat meat and rinse well. Rinse pot.
3 In the clean pot, combine goat meat, pineapple juice, 4 cups of water and 1 tablespoon salt.
4 Bring to a boil, skimming scum that floats on top. Lower heat, cover, and simmer for about 11/2 to 2 hours or until meat is tender but not falling apart. Using a colander, drain meat and reserve about 4 cups of the liquid.
5 In a wide pan over medium heat, heat oil. Add potatoes and cook until lightly browned. Remove from pan and drain on paper towels.
6 Add carrots and cook until lightly browned. Remove from pan and drain on paper towels.
7 Add bell peppers and cook for about 30 seconds. Remove from pan and drain on paper towels.
8 Remove oil from pan except for about 2 tablespoons. Add onions, garlic, and chili peppers. Cook, stirring regularly, until limp and aromatic.
9 Add goat meat and cook, stirring occasionally, until lightly browned.
10 Add tomato sauce and the 4 cups reserved broth. Bring to a boil. Lower heat, cover and continue to cook for about 30 to 40 minutes or until meat is fork-tender and sauce is reduced.
11 In a bowl, combine liver spread and about 1/2 cup broth from the pan. Stir until smooth and add to the pan. Stir until well-dispersed.
12 Add pickles and olives.
13 Add potatoes and carrots and cook for about 3 to 5 minutes or until tender.
14 Add bell peppers and continue to cook for about 1 to 2 minutes or until tender yet crisp.
15 Season with salt and pepper to taste. Serve hot.

The health benefits of Salmon

Nutritional information
Fish and shellfish are nutrient dense and salmon is no exception. It is rich in a protective antioxidant, astaxanthin, and it is an excellent source of high-quality protein, vitamins and minerals (including potassium, selenium and vitamin B12). However, it is the content of omega-3 fatty acids in salmon that receives the most attention, and rightly so. It is this essential fat which is responsible for the reputation of oily fish as a valuable ‘brain food’.

A 100g serving of salmon (farmed, cooked weight) contains:

The most beneficial omega-3 fats occur naturally in oily fish in the form of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). These fatty acids are thought to contribute to healthy brain function, the heart, joints and general well-being. The idea that eating fish may reduce the risk of heart disease began in the 1970s and 1980s when it was noted that among the Inuits in Arctic Greenland (where high consumption of marine animals was the normal diet), heart disease was very low. In addition to heart disease, scientists are now investigating the role that fish consumption may have in protecting us against some cancers as well as many chronic diseases including Alzheimer’s disease , asthma, depression, diabetes, high blood pressure, macular degeneration, multiple sclerosis and rheumatoid arthritis.

Omega-3 is termed as an essential fatty acid because the body cannot synthesise it, so it must be obtained from the diet. To optimise your body’s supply of essential fats rich in EPA and DHA, aim to eat oily fish – such as salmon, mackerel, sardines, herring and fresh tuna regularly. The Department of Health guidelines state that we should aim to eat fish at least twice a week with at least one portion being an oily variety, like salmon. For pregnant and breastfeeding women there is specific guidance. EPA and DHA are important for your baby’s developing central nervous system, including the brain, so they make a valuable contribution to a healthy balanced diet during pregnancy, but follow do the NHS advice with regards to quantities.

Bulalo

Ingredients
7.5 lbs. Beef shank and Beef Knee Cap
1 Knorr beef cube
1 bunch Napa cabbage pechay Baguio
2 pieces sweet corn divided into 3 parts
15 to 20 pieces long green beans Baguio beans
4 medium yellow onion wedged
1 tablespoon whole peppercorn
3 tablespoons fish sauce patis
12 to 15 cups water

Instructions
Boil water in a large cooking pot.
Add beef shank. Cover the pot and boil for 15 minutes.
Scrape the scums out of the cooking pot. Add whole peppercorn and onion. Cover the pot. Continue to cook in low heat for 2 to 3 hours or until the beef becomes tender. Note: you can use a pressure cooker to tenderize the meat. It should only take around 45 minutes.
Scoop the fats (oil) floating on top of the soup and discard.
Add corn. Cover and cook for 15 minutes.
Add long green beans (Baguio beans) and season with fish sauce (patis).
Arrange the fresh Napa cabbage (pechay baguio) on the serving bowl. Pour hot broth and arrange the beef shank, corn, and long green beans in the bowl.
Serve hot. Share and enjoy!

CREAMY TUSCAN CHICKEN THIGHS

Ingredients

2 packages of bone in/skin on chicken thighs, or about 6
olive oil
salt and fresh cracked black pepper
1 large shallot peeled and minced
3 cloves garlic minced
1/4 cup Marsala wine or any dry white wine
1/4 cup chicken broth
1 and 1/2 cups heavy cream
1/2 cup chopped sun-dried tomatoes jarred, in olive oil
1/2 cup good shredded Parmesan cheese
large handful 2 cups fresh spinach, rough chopped

1/2 cup chopped cherry tomatoes or any good red tomatoes
parsley or fresh thyme for garnish

Instructions

1.Coat the bottom of a large shallow cast iron skillet or braising pan with olive oil and heat on medium heat until hot. Season the chicken on both sides with salt and pepper and then brown, skin side down for about 15 minutes, until the skin is nice and crisp. Flip the chicken and cook for another 15 minutes, or until done. The meat should read 160F on an instant read thermometer. Set aside on a plate and cover with foil, or put in a warm oven while you make the sauce.
2.Add the shallot and garlic to the pan and saute, stirring constantly, for a couple of minutes. Then add the Marsala wine and let it bubble down while you scrape up the browned bits from the bottom of the pan.
3.Add the chicken stock, heavy cream, and sun dried tomatoes, and cook the sauce for a few minutes until it starts to thicken, stirring frequently. Scrape up everything from the bottom and sides of the pan into the sauce. NOTE: This isn't a super thick sauce, but it will thicken somewhat as it cooks.
4.Add the cheese and stir until incorporated. Add the chopped spinach and fresh tomatoes to the pan, and cook until the spinach has wilted. Add the chicken back into the pan and heat through before serving, garnished with fresh parsley or thyme.

Chicharon Bulaklak

Ingredients:
1 1/2 Kilo pork small intestine with mesentery intact
2–3 pcs bay leaves
1 tbsp peppercorns
1 head garlic crushed
salt
cooking oil

Cooking Procedure:

To Clean:
-Cut the pork intestine and mesentery into manageable sizes.
-Using a thin sharp knife, make a slit along the outer radius of the small intestine.
-Wash each pork intestine and mesentery thoroughly with running water.
-Scrubbing off all solid matter inside the intestines.
-Do this several time until all the solid particles are removed.

To Pre-boil
-Put the pork intestine and mesentery in a large Pan
-Pour in water about 2 inches above the intestines.
-Add the bay leaf, peppercorns and 1 to 2 tbsp. of salt.
-Let boil and simmer for 30 to 45 minutes or until tender.
-Remove the pork intestine and mesentery from the pan and let drain
-Discard the boiling liquid and other residues.
-Keep refrigerated for several hours to chill or until ready to fry.

To Deep Fry
-Cut the pork intestine and mesentery to the desired size and evenly season with salt.
-Add oil to the deep fryer at the recommended level.
-Pre-heat the deep fryer to 200°C or to the highest setting.
-Now deep fry the pork intestine and mesentery in batches.
-Expect the oil splashing so replace the deep fryer lid immediately.
-Deep fry for 3 to 5 minutes or until the vigorous oil splashing has stopped turn over the pork intestine and mesentery.
-Continue to deep fry until the intestines and mesentery color has changed into a nice golden. When done remove from the deep fryer and drain oil in a plate lined with paper kitchen towel. Alternately heat a generous amount of oil in a deep frying pan.
-Deep fry for 3 to 5 minutes in batches or until color change to golden brown and crisp, drain excess oil in a kitchen paper towels.

Recipe of the day

Embutido

Ingredients:

For the embutido

1 kg ground chicken
1/3 cup raisins
1 pc small onion, diced
4 pcs sausage, diced
1 pc small carrot, diced
2 pcs whole pickles, diced
1 pc Knorr Chicken Cube
¼ cup Knorr Liquid Seasoning
1 pc raw egg, slightly beaten
¼ cup flour

For the sauce:

2 tbsp oil
2 cloves garlic, chopped
250 g store-bought Italian-style tomato sauce
1 cup water
1 pc Knorr Chicken cube
Ground pepper to taste

Procedure:

Prepare steamer by adding water half way up the water pan and letting it boil.
In a bowl, mix ground chicken, raisins, onions, sausage, carrot, and pickles
Add mashed Knorr Chicken Cube, Knorr Liquid Seasoning, egg, and flour. Mix well.
Divide mixture into 4-5 portions. Wrap each portion in a piece of aluminum foil by rolling into a log. Secure both ends by crimping and folding.
Place rolled embutido into steaming basket and steam for 40 minutes or until fully cooked. Check doneness by piercing the foil with a knife.
To make the sauce, sauté garlic in oil until slightly browned. Add tomato sauce, water, and Knorr Chicken Cube. Let the mixture simmer and season to taste.
To serve, unwrap embutido then slice. Arrange on a plate then pour sauce over slices. Serve while warm.
Alternatively, you can pan-fry the roll in hot oil (remove the foil first) before slicing to get a nice brown color and a tinge of caramel flavor. You can also forgo the sauce and serve it with catsup.

Beef Salpicao

Ingredients:
- 1½ lbs beef sirloin (or tenderloin), cubed
- 3 tablespoons garlic, minced
- 1 teaspoon salt
- ⅛ cup butter
- 3 tablespoons olive oil
- ½ teaspoon ground black pepper
- 5 tablespoons Worcestershire Sauce
- 2 tablespoons oyster sauce

Procedure:
1. Combine the beef, salt, pepper, and garlic then mix well. Let stand for 10 minutes.
2. Add the olive oil and marinate for at least 30 minutes.
3. Apply high heat on a pan then put-in the combined ingredients once the pan is hot enough.
4. Sear the beef until the color of the outer part turns brown. Try to toss the beef while searing so that all sides are uniformly cooked.
5. Add the oyster sauce and Worcestershire sauce and continue tossing until the liquid dries up.
6. Put-in the butter and cook for 2 to 3 minutes more.
7. Transfer to a serving plate.
8. Serve hot. Share and enjoy!

Ribeye and Roasted Garlic Pan Sauce

Ingrediants
- 12 ounce Yukon Gold Potatoes
- Chives ¼ ounce Chives
- 6 ounce Green Beans
- 2 Clove Garlic
- 6 tablespoon Sour Cream
- 20 ounce Ribeye
- 1 unit Beef Demi glace
- 1 tablespoon Olive Oil
- 1 tablespoon Vegetable Oil
- Salt
- Pepper
- 2 tablespoon Butter

Procedure:
1. Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Dice potatoes into ½-inch pieces. Thinly slice chives. Place garlic cloves in the center of a small piece of foil; drizzle with olive oil and season with salt and pepper. Cinch into a packet.
2. Place garlic foil packet on a baking sheet. Roast on top rack for 10 minutes. After 10 minutes, carefully add green beans to sheet; toss with a large drizzle of olive oil, salt, and pepper. Return to oven until garlic has softened and green beans are browned and tender, 12-15 minutes.
3. While garlic roasts, place potatoes in a large pot with enough salted water to cover by 2 inches. Boil until tender when pierced with a fork, 15-20 minutes. Reserve 1 cup potato cooking liquid, then drain and return potatoes to pot. Mash until smooth, then stir in sour cream, salt, and pepper. If needed, add reserved potato cooking liquid a splash at a time until potatoes are creamy. Keep covered until ready to serve.
4. While green beans roast, pat steak very dry with paper towels; season with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Once oil is hot, add steak and cook to desired doneness, 3-6 minutes per side, depending on thickness of meat. (TIP: If steak has a layer of fat on one side, use tongs to flip meat and sear until fat is rendered and crispy.) Turn off heat; transfer to a cutting board to rest. Wipe out pan.
5. Once garlic is done, transfer to a cutting board and mash with a fork. Melt 1 TBSP butter (2 TBSP for 4 servings) in pan used for steak. Add mashed garlic (start with half and add more if desired); cook for 30-60 seconds. Add demi-glace and ¼ cup water (⅓ cup for 4). Simmer until slightly thickened, 1-2 minutes. Turn off heat. Stir in another 1 TBSP butter (2 TBSP for 4) and any resting juices from steak. Season with salt and pepper.
6. Slice steak against the grain. Stir half the chives into potatoes. Divide potatoes, green beans, and steak between plates. Top steak and potatoes with sauce. Garnish with remaining chives.

“Andres Bonifacio Day”

Andres Bonifacio was born in Tondo, Manila, on Nov. 30, 1863. He grew up in the slums and knew from practical experience the actual conditions of the class struggle in his society. Orphaned early, he interrupted his primary schooling in order to earn a living as a craftsman and then as clerk-messenger and agent of foreign commercial firms in Manila.

Bonifacio was the first to take the first big, bold step towards to freedom by leading uprisings that successfully reclaimed independence from the colonizers. Bonifacio and the Katipuneros were the first to stand up and take arms to meet Spanish civil guards head on.

He fought for our independence and freedom. He showed that great things can be achieved if people work together towards the same goal. Andres Bonifacio is the epitome of courage and perseverance – traits that Filipinos are still known for. His heroism filled the hearts of his men then, and it should fill ours today. He gave the Philippines its independence back.

Recipe of the day

Pork Binagoongan with Gata Recipe
Ingredients:
-1 Kilo Pork Belly (Liempo) cubed
-2 tablespoon corn oil
-6 cloves garlic, chopped
-1 white onion, minced
-5 small tomatoes, chopped
-1/2 cup shrimp paste (Bagoong)
-3 tablespoon cane vinegar
-1 1/2 teaspoon sugar
-1 pc chili (banana pepper, jalapeno, or long chili pepper), sliced
-3 eggplants, sliced diagonally
-1/2 cup coconut milk/cream
-salt and pepper to taste

Cooking Procedure:
1.Place cubed liempo in a stockpot. Cover with water and let boil for at least 15 minutes. Prepare the rest of the ingredients while meat is cooking.
2.Pour corn oil into a hot pan. Saute garlic and onions until softened. Add tomatoes and cook until softened too. Stir-fry bagoong until aromatic then put in the boiled pork pieces and 1/2 cup of boiling water used to cook the pork.
3.Simmer until pork softens, then add vinegar, sugar and chili then season with salt and pepper to taste. Adding pork broth is optional.
4.When pork is fork-tender, add sliced eggplants and coconut cream. Bring to a boil and simmer until mixture thickens and eggplants are soft, about 10 minutes then serve with steamed rice.
