What’s the secret to achieve baking a cheesecake without cracks?

No, it’s not water bath. Hate doing that, well I never tried it and I’m not looking forward to try it.

So what is it really? Honestly, I don’t know! Guess you just have to be me. 🤣🤣🤣

Seriously though, its to know your oven (when it’s running hot or cold) and please, please invest in an oven thermometer. Also, also.. Never over-mix your batter. 😉

Today, we join the Church in celebrating the feast of our patron, St. Scholastica.

St. Scholastica, like her twin brother St. Benedict, is a model of faith and prayer. Benedict and Scholastica lived apart from each other as they ran and led their separate religious houses. But each year, they would meet for spiritual conversations. One day, after a delightful visit, Scholastica asked her brother to stay, so they could talk more. However, Benedict refused, insisting that he should be a good role model to his monks and not be away from the monastery during the night. Upon hearing this, Scholastica folded her hands in prayer. Eventually, lightning flashed, thunder roared and a heavy downpour of rain began. Benedict could not leave anymore and reproached her, "God forgive you, sister! What have you done?" Scholastica replied, "When I appealed to you, you would not listen to me. So I turned to my God and He heard my prayer." And that event became known as St. Scholastica's "miracle of the rain."

May we be like St. Scholastica, a trusting and faithful child of God.
