Meet the Capybaker! Sabrina Dela Paz has been passionate at baking since childhood. Today, she’s behind Capybaker’s one-woman team, from prepping batter, to photography and marketing.

“I like working with my hands,” she says. “Whether I’m baking cookies, making art, or playing the piano, I find working with my hands highly rewarding, especially if it brings joy to other people.”

Abby Dela Paz shares the science of baking and takes her cookie obsession to the next level by channeling the zen of capybaras through Capybaker.

Baking has been one of Abby’s passions ever since she learned it. Coming into the pandemic, she was inspired by all the small businesses that surfaced and saw the value of opening an online bakery to share her baked goodies with more people. Thus, the birth of Capybaker.

Capybaras, also known as ‘Nature’s Chair’, exhibits a level of zen that Abby hopes could reach people through the cookies she bakes, even if the process behind baking is “not so chill.”

Abby shares that part of her research for developing her own recipe was studying the science behind every ingredient.

“You come to familiarize yourself with terms like the Malliard reaction, which is basically the browning of food when its sugars are exposed to heat, and the law of diminishing returns, which explains why I found a 24-hour rest optional, as opposed to a 48-hour rest, which isn’t doubly better like you’d think,” she said.

The 24-hour cookie is the highlight of Capybaker. It is called as such since the process of resting the batter for 24 hours to give the flour time to hydrate and break down the proteins will produce a well-balanced chocolate chip cookie, along with the finest ingredients Abby could get her hands on.

Moreover, Abby hopes to advocate for eco-friendliness through her small business.

“Every element of our packaging is a conscious choice. Our cookies are packed in sugarcane boxes, which are 100% biodegradable, compostable, and food-grade containers,” Abby said.

Handling a small business challenged Abby to learn lots of skills all by herself but the help of others, such as her sister, will allow her to focus more on experimenting with her baking.

For 2023, Abby plans to use up leftover ingredients and add chocolate orange, white chocolate mocha, and ruby chocolate flavored macarons to her menu so nothing will go to waste.
