May tatlong bagay kung saan maaaring ito ay mangyari;

1. Temperature - kung ang honey ay nakalagay sa may temperature na 10°C o mas mababa pa ng mahabang panahon.

2. Ratio of glucose and fructose - glucose at fructose ay uri ng sugar. Ang honey ay may iba't ibang ratio ng glucose at fructose na naka-depende sa halaman o bulaklak na nakuhanan ng bees. Ang honey na mas mababa ang glucose ang mas mabilis mag crystallize.

3. Pollen - Ito po ay normal na meron sa isang honey. Dito malalaman natin kung anong halaman ang source ng honey.
