How our tenderloin steak is differentfrom others? We only use chateaubriand from tenderloin slab.
Average whole tenderloin slab is 2.4~3kg. It consist with butt, tail, skirt and chateaubriand.
Chateaubriand only is about 500g ~ 800g. Its perfect round shape center part.
Almost all restaurant uses entire tenderloin by shaping tenderloin slab into round, then tie with string before to cut into steak. We don't. We only use chateaubriand for our steak. So the taste and tenderness is consistent.
For a while, we are promoting our tenderloin pepper steak, tenderoin grill steak, and T bone for p795. For tenderloin, you get two sides and T bone, you get one side(mash potato, fries or salad) only.

Cured for a week, and just got done smoked last night. Our bacon is ready. Will be sliced and ready to by sold by 3pm this afternoon. Vacuum sealed at 330g p300 per pack.
Cook with half inch deep water in your frying pan, and let the water evaporate by the heat and keep frying until how you like it.

Cheese arrived. USA Hilma cheese, and some Australian Bega cheese arrived. We have; Extra Tasty, Tasty, Vintage Strong(sharp) cheese from Australia. This was a test run, and all they had was 250g pack. All Bega 250g is p395.
For USA HILMA, pepper jack, Orange cheddar, and colby arrived.
No matter how much I buy, they go out fast, so hurry.

Finally, we started making burger patties again. I am not going to explain how they are since most people already know how they are. It's the highest demanded item we sell.

Today, we're working with raw Aussie T-bone steak cut. It's not as tender as USDA Choice, but it's close to USDA select. I have very bad teeth but I ate the whole steak without having trouble. We cut T-bone or porterhouse in house. We don't have L-bone luckily.
I am selling it as raw meat for you to take out and have bbq for yourselves. P1150 per kg and you get to choose the cut. There are some thin cuts but it's usually cut in 1.3~1.5 inches thick

Prawns are 2~3 pcs for 350g which is very good size(jumbo). Only prawns cost p700 if ordered separately. Prawns can be cooked as butter lemon, kung pao or cajun.

Went to Orani market to buy crab.
Crab starts at p200 per kg up to p2350 per kg today. I bought p1500 per kg ones, which is 3rd from the top level.
It was busy and you must know what you are doing to join the auction, otherwise, just have to buy from another middle man.
With price like this, I don't think I can sell it for a while. It was "special" order from a customer.
