MOUSSAKA ISN'T TRADITIONAL GREEK FOOD

Although known as Greece's national dish, Moussaka originated in the Levant region or modern-day Syria, Lebanon, Palestine, Israel, Jordan, and Cyprus. The original version looked more like an eggplant stew (we've personally tried this at Middle Eastern restos!), and Arab immigrants introduced it to locals in Greece and Turkey.

Chef Nikolaus Tselementes, influenced by French cuisine, developed the Greek Moussaka with the use of mpesamél (pronounced as besamél) in the 1920s. The difference? Greek bechamel uses pure olive oil instead of butter. We do the same, of course! It's healthier and yummier!
