𝐌𝐄𝐌𝐎𝐑𝐘 𝐎𝐅 𝐓𝐇𝐄 𝐅𝐔𝐓𝐔𝐑𝐄

This cocktail is inspired by the pressing need for sustainability and environmental responsibility within the bar and mixology industry. This drink seeks to challenge the conventional norms of cocktail creation by utilizing ingredients that would typically be discarded, such as spent tea leaves, coffee grounds, and fruit skins. By repurposing these elements, not only reduces waste but also showcases the potential for flavor and creativity found in overlooked ingredients.

𝐒𝐔𝐌𝐀𝐊𝐀 𝐇𝐈

The Sumaka Hi cocktail is a heart felt tribute to my beloved hometown, Antipolo City, where we celebrate the Sumakah Festival every May. The Sumakah Festival is named after Suman ( a type of sticky rice delicacy), Manga or mango, and Kasoy or cashew - which encapsulates Antipolo's culinary heritage.

I would like to incorporate suman, manga, kasoy, and coffee with Dewar's 12 as my whiskey of choice - which will tie all of Antipolo's delicacies together. This cocktail aims to capture the comforting and familiar taste that is synonymous to home. Definitely, each sip of Sumakah Hi is a journey through the flavors and memories that makes my hometown so special.

May this cocktail serve as a tangible reminder that each small step towards zero waste can have a significant impact. I hope to encourage other bartenders and mixologists to think creatively and resourcefully. Let us promote the use of alternative ingredients and sustainable practices and inspire a broader movement within the industry, where environmental consciousness becomes a key component of the art of mixology.

Dewar's

Through his wonderful mix of personal experiences and cultural element, 𝐏𝐚𝐦𝐚𝐧𝐚 is a lovely concoction inspired about his father's favorite breakfast, Banana and Pandan Tea. Those flavors evoke a lot of nostalgia for him especially coming from Nueva Ecija, where there's an abundance of such fresh ingredients right in their backyard.

𝐈𝐤𝐢𝐠𝐚𝐢 𝐒𝐨𝐮𝐫, ikigai is a Japanese term that blends two words “iki” meaning “to live, and “gai ”meaning "reason” (A reason to live). It is a concoction dedicated to his Japanese mentor as he contributed a big part in his bartender's journey. The reason why he commits to a mission, his passion, to his profession, and vocation in his life today.
