Mateusz A Zurek & Jahmarley Grant The Bywa Team is a Chef duo with unique cultural and culinary backgrounds.
Jahmarley with a Jamaican background, grew up in the USA & Canada. Mateusz with his Polish upbringing, raised in a family with strong German roots. Together we pull from a diverse collection of tastes informed by our cultural interpretations. Our culinary inspirations range from Japanese, French, Polish, Jamaican, and even Nordic influences.

Have you ever had Jerk marinated duck w. beet ‘demi-glace’ and white asparagus. Us neither but it sounds good. Our elements series was great and this week we begin our Herbs & Spices series. Our first three weeks have just been great. As our ‘Elements’ series comes to a close this week and our ‘Herb and Spice’ series begins we are so excited for the many more dishes, stories, inspirations, and personalities we will share around our table. This is an invitation to come and enjoy.

BYWA Tasting Room in its current form is coming to an end. October 29th will be the last day that we will be serving dinners in our current space.
We have always had the goal in mind to bring our experience to more people and in a space more tailored for the experience. We have a long journey ahead of us, we thank you for being a part of it so far. We hope that you follow us on through this time of transition and into the future.

This Saturday June 25th, we will be hosting a special dinner featuring and paired with some of our favourite champagnes by Fleury.
