LIME & LAVANDER PANCAKES

The farm had so many lavander flowers, and being Guatemala, limes were available as well... So why not making pancakes with a fresh and floral twist from the garden?!
These were definitive my favorite breakfast, also combined fresh fruit like papaya and pineapple, and with the organic honey that the farm could get for us 🍯🐝

ORGANIC TEA
From my Menu Creation for the Permaculture Crash Course at Granja Tzikin, in Tzununá Guatemala.
For the breakfast set up I always wanted tea as an option, apart from coffee with goat milk and vegetable milk.
Due to the amount of aromatic herbs that has planted on its garden, it was really fun to mix-and-match everyday with different plants from the garden.
Verbene, rosemary, basil, mint, peppermint... You name it! Always combined with fresh ginger and a stick of cinnamon: DELICIOUS!

Menu Creation - Permaculture Crash Course by April 2023
I was invited to plan and supervise the ex*****on of a menu that should be served for 5 days, 3x meals per day, for 18 people in total.
The goal of the planning was to use as many ingredients from the farm as possible, in that way making the cooking as sustainable, no-waste and as fresh as possible.
It was beetroot season, so I had a lot of beetroots to plan in the menu! Also I tried to include as many local elements as possible.
The objective was also to provide healthy and balanced meals, with all the macro and micro nutrients present.
The land blesses us with so many amazing ingredients with amazing flavours! It was up to me to come up with creative ways to present these local harvested ingredients and plan them in order to always up-cycle leftovers and be efficient in the process of cooking.
The project was done is Spanish and the recipes were all written step by step in spanish also, so that the ladies in the kitchen would be able to follow 🌱🧑🍳
OVEN PASTA with VEGGIES FROM THE FARM, homemade PESTO and homemade GOAT CHEESE

Using the goat cheese that the farm produces, as well as the homemade peanut pesto that the group help me making, I made this easy and yummi pasta using vegetables from the garden and . Totally vegetarian!
This meal was a success, served with salad from the garden, as well as the never ending beetroots that we had to use that week.

HOMEMADE PEANUT PESTO FROM THE FARM
While looking for ingredients to use for the menu, I search everywhere in the kitchen and garden...and I found some lost peanuts that have been sun dried at the farm!
At there is a lot of Thai Basil growing, giving this the nice fresh twist to the original pesto recipe.
This project was also transformed into a group activity for the students of the course, who helped me peeling the peanuts 🥜
To make it I used:
- garlic (from the garden)
- thai basil (from the garden)
- parmesan cheese
- olive oil
- salt & pepper
- lime juice
Pro tip- its never too much garlic! Sprinkle with a bit of lime juice in the end for extra flavour.
BEETROOT PANCAKES for breakfast 🥞

We had too many beetroots from the garden and the challenge was to transform them into good food, providing diferent and creative solutions for them.
Because I like upcycling and no-waste cooking, the day before for dinner I planned a nice beetroot salad, and with the leftover cooked beetroot, I created these beautiful pink pancakes for the breakfast next day. They were adorned with daisy flowers from the garden *.*

A traditional Guatemalan breakfast: el desayuno Chapín.

Chapín is the name given to Guatemalan indigenous/local people.
This traditional breakfast is composed of fried black beans, scrambled eggs, avocado slices, fried banana, créme fraiche and of course, tortillas!
I absolutely loved this breakfast, although it is not an healthy one, it is packed with protein and fats to give you a boost of energy in the morning - you can surely go hiking in the jungle after this!

Typical meal in Guatemala.
Guatemalan food is very humble and simply cooked. The 2 sources of animal protein are basicly chicken and beef. Food is usually presented in the form of a rich stew, grilled or deep fried.
In this local restaurant in the center of Tzununá, the options for lunch usually are:
COMEDOR TZUNUNA
- pollo a la plancha (grilled chicken)
- pollo milanesa (deep fried chicken)
- pollo con cebolla ( chicken with onions, the option I chose here)
This menu came with Água del Dia (water of the day, usually fruit juice with water, homemade) and tortillas negras (black corn tortillas).
Total cost: 35Q (8Q +- 1€)
In Latin America bread is not comum, because instead of wheat fields, they got corn fields. So tortilla is the latin american bread. It is versatil as bread, and really nice to go along with food. Corn is also a super grain, giving away energy for longer than wheat.
Spicys are are not very used, as they are not all traditional from this part of the world. Salt, pepper and maybe some paprika are the main seasoning ingredients.
The first place where I arrived was Santa Cruz de La Laguna, a small village around the Lake Atitlán.
In this village there at sort of 3 small shops, all selling the same, and it is hard to find basic items. For that you need to go to other bigger villages, such as Panajachel or San Pedro de La Laguna.
It is interesting to see how the vibe and crowd changes from village to village. I definitely found the crowd in this place the most mixed one, oscillating between backpackers, luxury travelers, young people and old travelers.
A beautiful thing I found out as soon as I arrived was the amazing job of natural construction you can find in these villages.
These “rooms”, for example, from Free Cerveza hostel, definitely caught my attention and gave me that uaaau feeling.

Guatemala is the land of tropical forests, Mayan culture and Vulcanos.
There are still 8 out of 11 active vulcanos in Guatemala!
The Lake Atitlán was formed more than 80.000 years ago when a vulcano erupted and left a caldera that was filled with water from San Francisco and Quiskab rivers.
Nowadays it has 3 vulcanos surrounding it: San Pedro, Atitlan and Toliman.
Because at the Lake Atitlán we are living in the mountains, way above the sea level, the climate is colder than the rest of the country, leaving it with a climate similar to great spring/summer weather in Europe, in opposition to the humity you experience at the sea level.
The views are breathtaking. The main food plants you can find in this area are coffee plans, papaya trees and banana trees.

My first stop in Guatemala was the Lake Atitlán - Santa Cruz de La Laguna. The idea was to start my trip doing a Workaway experience at an hostel.
Atitlán is the biggest lake of Guatemala, and the home of still very indigenous communities, as well as small expats communities.
Getting there was a challenge! I came by a public shuttle organized by the hostel and it was a scary experience, for sure.
I had just landed in Guatemala City airport, alone, looking for a car to which I didn't even knew the plate number! I thought I had been scammed. But it worked out after half an hour, and I was able to find the driver.
The journey should have taken 3.5h until the lake, but it took 6h after all. What I heard that soon become the most heard saying was "This is Guatemala!" - and somehow that serves as excuse for everything not going as expected.
In order to access the small villages of the lake, you have to take a "lancha" - or a small boat. They are not accessible by shuttle. But at the lake the lanchas go last until 19h, in Panajachel. I arrived there at 18h58 and was already seeing my life going backwards - me having to find a place to sleep last minute, in the night, middle of nowhere, somewhere in Guatemala 😅
BUT in the end everything worked out well - I could get the last lancha, and after 15min driving in the boat, I arrived at my new home, in Santa Cruz de La Laguna! 🎉🌸
Our first stop was: GUATEMALA
Located right under Mexico, this is the land of the Mayas.
My first stop was at the Lake Atitlan, where I stayed for almost 3 months.
It is an extremely diverse country, with one of the richest fauna and flora in the world. Here you find very warm temperatures at the sea level, have beaches, and then you have mountains with different climates, as well as many active volcanos, still up to this date.
There is still a big Mayan heritage going on, but most of the country was forced to convert into Catholicism when the Spanish invasions took place in the 1500’s.
Because of being such a religious country, and with very well define roles in society for men and women, these two don’t usually blend in in the daily life, being even apart when they go to church.
There is also a big distance between locals and visitors, being also a challenge to really integrate in the culture and sharing ideas with eachother. Still, it is possible, and great progress is being done. Of course this doesn’t apply to the capital city, but yes to all other more small and local areas (such as the lake).
The official language is Spanish, but most of the indigenous people speak other Mayan languages, such as Cachikel, making it again harder to blend in and find common understanding.
I was lucky enough to meet some amazing Guatemalan people, both from the country side as well as the city, and I couldn’t be more fulfill with all the experiences we have shared together, most of the time, in the kitchen ❤️ and this is why I love cooking so much - it is a beautiful way of connecting and sharing with other cultures - it is an human activity that everyone depends on in order to survive, and by making it a social activity, just breaks a lot of barriers we have previously created with speech, preconceptions, and different appearances.
