MIRACLE RICE/NOODLES
What's the best way to cook Miracle Rice and Noodles?
1. Drain and wash the shirataki rice/noodles in a collander.
2. In a boiling water, put the shirataki noodles/rice and have it boil for 2-3 minutes. For the rice, check the texture by taking a piece and if the rubber-like texture is tolerable enough to your likings. Same for the noodles. Cutting a strand will help in tasting.
3. Drain the shirataki noodles/rice.
4. Fry in a pan without oil. Let it steam off. You know it's ready when it is dry but not too dry that it shrinks in size.
And it's ready! You may now use it for pasta or stir-fries!
For the rice, I suggest you eat it with dishes with strong flavors like tom-yum soup or Sinigang. Even adobo! But make sure those dishes were cooked keto-style. You may also make miracle fried rice! Season it to your likings!
For the noodles, based on my own expeirence, I like it with stir-fry. I made keto-style pad thai, japchae, and pancit using the Angel Hair style Miracle Noodles.
Many people don't like Shirataki for its rubbery texture. The rubbery texture is tolerable. Also for MiracleNoodles, I didn't notice much the smell they're all complaining about Shirataki. I have yet to try cheaper shirataki products to find out and compare. ๐
What's for tonight's dinner:
Beef brocolli & mushroom paired with my all-time fave Cauliflower rice with egg
Beef brocolli & mushroom Recipe:
Ingredients (quantity based on 1-2 servings)
* 1/4 beef cuts (flank steak, stroganoff cuts, flat iron or sirloin steak)
* 4 mushrooms, sliced
* brocolli florets
* 1 slice ginger, minced or you may use ginger powder, 1 tsp
* 1 tsp garlic powder
* 1-2 tsp of apple cider vinegar or 1 slice lemon
* 1 tsp of Coco Aminos
* 1/2 tsp Xanthan Gum
* Salt and Pepper to taste
* chili flakes (optional)
* Olive oil
* 1/4 cup water
* 1 tsp Fish sauce for umami taste
How to cook:
1. Marinade the beef with salt, pepper, ginger, and coco aminos in a bowl or ziplock. Keep in fridge for an hour or more.
2. In a pan, boil water and blanch brocolli florets for 2 minutes then drain.
3. In a medium heat pan, sear the marinated beef in olive oil until crisp and tender. The color will turn out nicely brown. This is good for 3 minutes, don't overcooked the beef.
4. Next, add the remaining marinade sauce and cook the beef for another 2 minutes. Set aside after.
5. In the same pan, stir-fry the blanched brocolli and mushroom.
6. Add the stir-fried beef and mixed well.
7. Add apple cide vinegar and fish sauce. Simmer for a minute.
8. Add xanthan gum and mix well.
Done!
Tips:
1. If you're on strict keto, it's preferrable to use Coco Aminos instead of Liquid Aminos. For this recipe I used Bragg's Liquid Aminos 4 spray (low-carb diet friendly). You may also use Worcestershire sauce BUT use it moderately or on small amounts only. It brings out the best flavors in meat.
2. Xanthan gum, this will thicken your sauce, just like how cornstarch works! Don't worry. This is optional, you can just let the sauce dry a bit for that thicker look.
3. Best served with Miracle Rice or Cauliflower rice!

How to prepare and cook Cauliflower Rice
If FROZEN:
1. Defrost cauliflower rice at room temperature. It will look a bit mushy just like other veggies put in freezer but don't worry.
COOK (4 mins)
1. Put the cauliflower rice in a non-stick pan on medium heat.
2. Let the steam come off before putting Olive oil or butter (any keto-friendly oil will do). Stir.
3. Add pinch of salt to taste.
Make your cauliflower rice a bit more full and fun!
๐ Add egg for a fuller fried cauliflower rice.
๐ Can also add cabbage, spinach, brocolli, etc.
๐ If you want chicken fried rice, fry the chicken first before adding the cauli rice.
Tips:

I always keep my cauli rice in the freezer. This makes it last longer, for up to 2 months.
โ
Letting the cauli rice defrost in room temperature is better than defrosting it in microwave as it retain its texture better.

Cauli rice + pinch of salt + olive oil is my go-to recipe when I eat it with Sinigang. ๐
