Veg Fatayer

Fatayer is a famous middle eastern snack which is undoubtedly scrumptious and very popular. Fatayer can be stuffed with a lot of different fillings like feta cheese ,minced lamb or chicken. Here I stuffed them with marinara sauce, bell peppers, sweet corn,crumbled paneer and mozzarella.
You can stuff them as per your choice. I made them with a mixture of all purpose flour and wheat flour, but you can use either of them as per your taste.

Recipe for 20-25 fatayer

Ingredients
All purpose flour 2 cups
Wheat flour 2 cups
Dry yeast 1 tsp
Sugar 2 tsp
Salt a pinch
Soft butter 2 tsp
Warm milk 1/2 cup
Warm water to make the dough

Ingredients for the sauce

2 medium size ripe Tomatoes
1 medium size Onion(chopped)
1 teaspoon Ginger-Garlic paste
1 small piece of Beetroot (optional)
1 teaspoon Kashmiri red chilli powder
1/4rh teaspoon Turmeric powder
1/2 teaspoon Garam masala powder

Parsi Mawa Cake

Mawa Cake is a rich and delicious tea time cake made with mawa (khoya or evaporated dried milk solids), flour, butter, milk and sugar. Scented with cardamoms this is a rich buttery cake that has an exquisite taste and can be made for special occasions.

Ingredients
Dry
โ€ข 1& 1/4 cups All purpose flour

Orange is in the season, and it is one of my most favourite citrus fruit. So decided this Christmas season to make a highly flavourful Orange cake,where I infused all the parts of the fruit; it's pulp, rinds ,zest, oil and juice . And the outcome is irresistible aroma in my entire house.

Here is the complete recipe

Preparation time: 30 minutes
Baking time: 40-45 minutes
Yealds: 12-14 piece

Ingredients

4 medium size Eggs
1&1/3rd cup of All purpose flour
1&1/2 tablespoon Cornflour
1 cup regular Sugar
3/4th cup Sunflower(or any other)Oil
1&1/3 teaspoon Baking powder
1/4th teaspoon Baking soda
2-3 tablespoon of Pumpkin seeds
1 teaspoon of Maida to coat the seeds.

For the orange mixture
1 big Orange
Zest from 1 Orange
2 tablespoon regular Curd
1/4th teaspoon Salt

Method
Line a cake tin of size (11ร—5)" with baking paper . Set aside.

Orange mixture
Take a whole Orange, slice into half and cook for 15-20 minutes with sufficient water to make it soft.

After 20 minutes remove from water to cool down.

Then put the cooked halves in a blender, blend it to make smooth puree.

Transfer to a jar. Add in zest of an orange, 2 tbsp Curd(yoghurt), 1/4th cup vegetable oil and 1/4th tsp of salt.

Mix well and set aside. Adding little oil to the mixture will help later to incorporate well with the cake mixture. And curd or yoghurt will make the cake soft.

For the cake batter

To a big mixing bowl, add in 3/4th cup of vegetable oil and a cup of sugar.

With an electric hand mixer, beat well to mix.
One by one add in eggs and beat well.
In a seperate bowl , sieve together all purpose flour, cornflour, baking powder and baking soda.

Now with a spatula mix the flour mixture to the egg mixture in batches.
Also add in orange mixture in batches.
Note that it is necessary to add in flour mixture and Orange mixture in batches, otherwise the fluffy egg mixture will settle down by the pressure of other ingredients.

Mix Pumpkin Seeds with 1 teaspoon of maida . This will help the seeds not to settle down at the bottom of the cake. You can use other seeds or nuts for some crunch to the cake.

At last mix the seeds to cake batter.
Your batter is completely ready now.

Pour the batter to the prepared cake tin. I also keek little batter to make 2 small muffins.

Bake the cake in a preheated oven at 180C for 40-45 minutes or until a toothpick inserted comes out clean.

In the meantime you prepare the pouring orange juice.

When cake is baked completely, take out from oven, poke with a skewer and spoon prepared juice over the hot cake so that the hot cake will absorb the juice.

Rest for sometime to cool.

Demould & garnish the baked cake with candied orange slices .
Slice them and serve as light dessert or tea time snack.
