20ml Aperol
20ml Elderflower Cordial
Topped up with Fever Tree Mediterranean Tonic

Method: Pour the first 3 ingredients in a highball/collins glass, fill to the brim with ice cubes and top up with tonic.

Stir gently.

Glassware: Highball

Never truer words spoken — 2020 has been a year of plan and no plan. At the dawn of 2020 we ventured into the ring with a plan, with vigour, positivity and direction.

Covid punched us all in the face, a stark reminder that sometimes we're just not in control, no matter what our plan was before we stepped in...

But as Mavericks, we don't lie still, we don't dwell on the past and we don't try to control the moment — there is always a way to defeat the odds, defy the ordinary and beat the mundane.

So, with head held high, we'll step back into the ring tomorrow, a new dawn, a new year, but with the same Spirit Within.

50ml OTM Vodka
20ml Lemon Juice
2tbsp Apricot Jam
20ml Aquafaba (Chickpea Brine)/1 egg white (~20ml)
5 sage leaves
3 dashes Peychaud's bitters (optional)

Glassware: Coupette Garnish: Sage Leaf
•

Method: Add all ingredients to a shaker, fill to the brim with ice cubes and shake hard for 10-12 seconds. Strain out the solids and shake once more without ice to emulsify the egg white/aquafaba (or blend on high for 5-7 seconds with a hand blender) and pour in a chilled coupette glass.

15ml Creamed Coconut
15ml Salted Maple Syrup
50ml Espresso

Glassware: Coupe
Garnish: Grated Tonka Beans

Method: Add all ingredients to a shaker, fill to the brim with ice cubes and shake hard for 10-12 seconds. Double strain into a chilled coupe/cocktail/martini glass.
