Aburi (あぶり) means flame-seared. With the brief exposure to high heat, a slight char is developed, along with an aromatic smoky flavour.

Smothered in creamy mentaiko sauce and gooey mozzarella, these plump Hokkaido Scallops are “aburi-ed” to perfection.

Junmai sake typically boasts a robust and rich taste profile, often featuring earthy, savoury, and rice-forward flavours.

However, the Okunomatsu Nihon Matsu Gentei Shinbun Maki Junmai breaks the mold with its fruity aroma and flavour palette. Wrapped in traditional Shinbun (Newspaper), this sake offers a delightful blend of banana, pear, and white flower aromas, complemented by fruity notes from melon and yogurt to strawberry, with a subtle hint of lemon peel acidity.

A unique gem from Fukushima Prefecture, best enjoyed chilled.

Hakkaisan Yukimuro 8 Years Snow Aged Junmai Daiginjo

A complex, medium-bodied dry sake.

What exactly is snow age? ❄️🥶

Snow aging is a traditional method of sake aging that utilises a snow-covered room to preserve and age the sake naturally, maintaining a consistently low temperature in a humid environment. This cool environment fosters slow aging, developing complex flavours and aromas without artificial refrigeration.

The sake is said to remain clear and water-white, with an extremely elegant and smooth texture.
