Fun challenge I couldn’t say no to, when I was asked to make 60 cupcakes to celebrate well-being week with the theme “Joy”…. and if it could include the pride colors to celebrate diversity it was an extra bonus 🤔👏🥳 The result was these chocolate cupcakes with raspberry cream cheese frosting with lots of happy color and a joy to eat 🥳💃🕺🏳️‍🌈 Happy well-being week 🧁🌺👏

Teamworks makes the dream work 🤩🥳 My youngest daughter has talked about a colorful layer cake for a loooong time…. now was the time to finally make it 👌🤩 Simple sponge layers colored in our favorite colors. Between each layer a white chocolate mousse that made each layer yummy and even more spongy 👌😋🍰

Time for a new challenge - homemade chocolate 👌 Tried it once several years ago, but now I really need to learn this skill… My first attempt of tempering ruby chocolate went quite well 👌 Inside they are filled with elderflower-ganache and they are approved by my husband 😋😆😋

Fastelavn is a Carnival tradition in Denmark where children dress up and "slår katten af tønden" - the danish version of piñata, where you hit a wooden barrel filled with candy 🥳 But the best thing about this is the Fastelavnsbolle “Carnival bun”. A wheat bun filled with vanilla custard, baked and then filled with whipped cream and topped with colorful icing 😋👏🤩

Last time I baked ‘Rundstykker’ and ‘Håndværker’, but this time I added ‘Horn’ and ‘Gifler’ which are popular in our family 👏🤩🤷‍♀️ and of course served with Danish butter and our thin pieces of chocolate, called ‘Pålægschokolade’ 🥰🥰

No Christmas without Danish Butter Cookies called ‘Vaniljekranse’ 🎄🤶🎅 You can make them by using a piping bag with a star nozzle, but this requires quite some finger muscle strength 💪 so when the girls are helping we always use the meat grinder for the Kitchen Aid and a special star nozzle in front 👌 This makes it a lot easier and gives the perfect star shape 🤩😋

As a Class Parent Rep for my youngest daughters class, I’m allowed to spoil them during the year 🥰 So for Christmas they each got a big Christmas Cookie in perfect Covid-sharing-style 👌🤪🎄🎅

One of the downsides of being an expat family is that you often miss out on being with your loved ones on their special day - but this doesn’t mean that you can’t celebrate them… it will just be in a different way 🥳🎂🤷‍♀️ Like when it was my mothers Birthday, I made her favorite cake: the classic Danish Strawberry tart with marzipan and vanilla custard filling. Instead of the classic look I formed a beautiful flower 🌹🇩🇰🥰

It is this beauty (pic 2) that is causing all these amazing bread 👏🙏🤩 We moved to Singapore during the summer of 2021 - back to good old South East Asia 🙏🥰☀️🌴🌺 Unfortunately it was not possible to bring my old sourdough due to Covid restrictions when entering Singapore which sent us into 14 days hotel quarantine 🤪🤷‍♀️ While living in the Service Apartment waiting to move into our new place, I had time to make a new sourdough starter 👌 So when the new sourdough had been feed over several weeks, we had moved into our apartment, I could finally continue my bread baking 🇩🇰🇩🇪🇹🇭🇦🇪🇸🇬

My daughters favorite buns 🥰 They are light, sweet and with a lovely flavor of cardamom 👌 This recipe has followed me since I was around 10 years old. I normally finished school around 2pm, and when you don’t have helpers in Denmark and the norm is that both parents are working, then the young children go to an After School Care. This was where I met Stine. She was one of the employees, she loved baking and you would often see me helping her in the kitchen. She was originally from Norway, so when I got the recipe from her, I named it “Stine’s Norwegian Buns” (Stines norske boller) 👌🤩🥰

When living in Munich I did Cupcake decorating workshops for the students at the school, so when I was asked if I could run a workshop at a Birthday Party I was more than keen 🥳👏🧁 unfortunately I was not available the day of the party so instead I made this package as a surprise for the Birthday Girl 🎉 this way she and her friends could decorate their own cupcakes 👌🥳🎉🧁
