✨Steak Au Poivre✨

Ingredients:
1. Baby potatoes
2. Baby carrots
3. Garlic
4. Shallots
5. Olive Oil
6. Salt to taste

Sauce:
1. 1 Tbsp olive oil
2. 30 g butter
3. 4 shallots, finely diced
4. 1 large clove garlic, finely diced
5. 1 heaped Tbsp black pepper
6. 2 Tbsp brandy
7. 250 ml beef stock
8. 250 ml cream
9. Salt to taste

1. Steak of choice

Method:
1. Add all veggies into the Culinary Co By Manu Cast Iron Roasting Dish, coat with oil and a large pinch of salt. Roast on 200C until golden brown. (40mins-1hr.)

For Sauce:
1. To the Culinary Co By Manu Cast Iron Casserole, add oil and butter. When the butter starts to foam, add shallots and garlic, and cook gently until translucent.
2. Add cracked black pepper to the shallot mixture and sauté for a moment. Add brandy and flambé to burn off the alcohol.
3. Add the beef stock, bring to the boil and simmer to reduce by half. Add cream and reduce (again) by half until sauce coats the back of a spoon. Season to taste with salt.

Steaks:
1. Season the Culinary Co By Manu Cast Iron Hot Plate with oil.
2. Add salt and pepper to the steaks, then sear in the hot plate with a bit of oil, garlic and butter. Flip once, then set aside to rest
