🍶Tenmei Bange Yamada Hanjuku Nama Junmai

Made using half -ripen “Yamadanishiki” rice grown and harvested in Aizu Sakash*ta, also known as Takashi rice, this one-of-a-kind Sake boasts a fragrance of sweet fruits and zesty citrus. It is mellow yet rich in umami, finishing with a refreshing bittersweet taste in one’s mouth. A perfect balance of acidity and bitterness that is unique to the excellent Sakash*ta Yamada rice.

Did you know that the decorated sake barrels that you commonly see at the entrance of Shinto shrines are called Kazaridaru?

Though empty, these decorated barrels are far from meaningless. They are gifts from Sake breweries and typically for ceremonial purposes. The Kazaridaru is a spiritual gesture that has a strong significance in Shinto.

Just this week, Michelle Yeoh made history by becoming the first Asian woman to win the Best Actress award at the Oscars!

Joining Michelle in paving the way for many young women out there and breaking gender stereotypes, is Miho Imada - who is one of about 20 to 30 women among Japan’s 1,200 master Sake brewers. This gender imbalance in the Sake industry is a common phenomenon seen in Japan and other parts of the world. According to cultural taboos, women were historically prohibited from entering Sake breweries due to being perceived as “unclean”.

Today, we will be sharing a little more on Seasonality in Japanese Sake!

Seasonal Sake refers to Sakes that are only available for a limited time of the year. Sake is usually only brewed in the cold months in Japan, bottled throughout the year and released during different seasons.

For example, Sakes such as Hiyaoroshi, are pasteurised just once after brewing, and left to mature in tanks through the hot months, before being released during Fall. These Sakes tend to have a lively yet complex, deep flavour.

🍶Ariiso Akebono Junmai Ginjo

There is a beautiful story behind Takazawa Shuzo that produces the Ariiso Akebono Junmai Ginjo. The founder, Riemon, was captivated by the gorgeous scenery of the Tateyama mountain range and decided to start brewing Sake in Himi, Toyama. The name Ariso Akebono comes from the poetic image of sunrise at the Ariso Sea.

Unsurprisingly, this Junmai Ginjo is refreshing and embodies a light and mild flavour that is accompanied by its complex aroma, beautiful as its origins.
