Hi Everyone
The 3rd Brewing Talk on “Cold-side of Beer Making” will commence at our brewery, 3 PM on the coming Saturday, 24/11/2018.
I would like to apologize to all those who were unable to secure a place in the 2nd Brewing Talks on the ‘Hot-side of Beer Making’.
As usual, the number of participants will again be limited to 10-15 so that ample time can be given to more specific problems the participants may encounter during their brewing sessions.
Topics covered in the 3rd brewing talk are:
1- Brewing Yeast – an introduction
2- Yeast Pitching
3- Primary Fermentation
4- Secondary Fermentation
5- Maturation and Conditioning
We will also touch on the issues of dry hopping, the timing, duration and their impacts on beer.

Since our announcement two days ago, the slots available for the 2nd Brewing Talks on the "Hot-side" of beer making is filling up faster than expected. Only a few more slots left and the registration will be closed.
My apology if you are unable to secure a place in this talk. In another 3 months or so, we may hold another session; perhaps you can join us then.

The 2nd Session of our brewing talks is now open for registration.
A fee of S$50/- is payable for this session and for that each participant will be given a set of notes on the topics covered plus a choice of a set meal and drinks from the accompanying menu.
The topics on the hot-side of brewing covered in the 2nd session are:
1. Brew water requirements for different beer styles.
2. Types of cereals, their preparations, uses and impacts.
3. Different mashing methods, mashing temperature, pH and their indented purposes.
4. Purpose of Lautering
5. Wort boiling and its purposes.
6. Hopping schedules and their effects.
As usual, the number of participants will be limited 10 to 15. The 2nd Session is more technical and the participants are expected to be those who had attended our 1st Session of brewing talks or those who have prior home brewing experience.

I would like to thank all who had attended the brewing talk held on the 13 Oct 2018 at our OnTap Bistro.
The lively responses and questions raised during the session show that the participants and I suspect, a lot of other home brewers and aspired home brewers, are enthusiastic about acquiring a better understanding and the know-how of making a better beer.
Partly to accommodate specific requests of some participants and also to allow time for those who have tried brewing their 1st beer to come back with more specific questions relating to their own experience, the 2nd session of the brewing talk is scheduled to be held on 3 Nov 2018 at 3:PM at our Bistro.
The topics on the hot-side of brewing covered in the 2nd session are:

The places are filling up fast.
Since the announcement of the resumption of our brewing talks yesterday, we have received more than 10 responses expressed interest in participating. Only a few more places left as we like to keep the group small.
I will take this opportunity to clarify some points that were raised in response to my earlier post:
1. This is a series of brewing talks that is split into three parts over a period of 2 months.
2. The talks will be held on Saturday at our brewery between from 3:30 PM to 5:30 PM
3. The Interval between each part will be about 2 -3 weeks to allow participants time to try their hands at brewing, Hopefully, they will come back for the next session with a better understanding of the brewing process and seek more targeted answers to problems they encountered during their own brewing sessions.
4. Due to the limited places allowed for each talk, priority for part 2 & 3 will be given to those who have participated in part 1 of the series and to those who have prior brewing experiences.
At the rate of response, it is likely that the 1st part of the talk may be held some time in the next two week or so and we will inform participants of the date when it firms up.
We apology if you are unable to secure a slot this time round, the next round of talks will probably be held 3-5 month after. I will take a breather to re-charge.

It has been a while since we last held a brewing talk at our brewery.
We have received a number of requests from craft beer enthusiasts to resume the talk. Many asked for a refresher, some wanted a more detailed explanation of the brewing processes.
Based on suggestions from our feedback, we plan to split the talk into three categories:
1- A brief overview of all grains craft beer brewing, which is an introduction to basic brewing knowledge.
2- Hot Side of beer brewing. This is aimed at those who like to explores in more detail about brew water, grains, millings, mashing, lautering, and wort boiling.
3 - Cold Side of beer brewing. This is aimed at those who want to know more about yeast strains and their characteristics, the fermentation process, dry hopping, and beer conditioning.
We envisage that each talk will have around 10-15 persons lasting about 2-3 hours, to allow more time to clarify questions participants may encounter in their own brewing sessions.
Acceptance is on first come first serve basis.
As these are more a session sharing experiences,
Category 1 is FOC
Categories 2 & 3, a token fee of S$ 20-30/- may be charged, as these are more technical, and taxing on me ;).
