It’s always satisfying to uncover a gem when you least expect it. Wang xiang 旺香 kitchen sells an assortment of stir-fried dishes such as hor fun, fried oysters and carrot cake - and you know what they all say about a jack of all trades being a master of none.

But during my prior visits here, I had seen how plate after plate of hokkien mee were being churned out & slurped up by the surrounding tables. Surely, I was on to something..?

Each plate is fried from scratch, which explains the waiting time even during off-peak hours.

The gravy here is delightfully viscous & clings on to the strands of noodles, wrapping the rich flavours of the stock around them. The addition of lala also lends an umami sweetness to the dish. There was a slight char to the noodles, bringing an element of smokiness as well.

Alas, the prawns are not peeled here, though it’s a minor inconvenience that can be overlooked.

I couldn’t help wondering out loud how this version is easily better than some bigger names out there.

Help yourself to the lard croutons 猪油渣 stored thoughtfully in an air-tight container at the condiments area. They may not look promising, but just like the hokkien mee, get ready for a pleasant surprise once you pop them in your mouth.
