Let’s Look at Some Bunkas

Bunka is a general purpose knife much like a Santoku is one of the popular shapes people look for in a knife. The Bunka has a slightly wider blade width and is suitable for cutting vegetables, while the angled tip area is particularly useful for cutting seafood, fish and meats.

The main difference between the Santoku and the Bunka lies in the shape of the blade tip, with the Bunka having a “Reverse Tanto Tip” rather than a curved Kamagata “Sickled-shape tip”.

The Tojiro blade consists of a VG10 core steel, clad by 13-Chrome stainless steel, which is ideal for both professional sharpness and easy maintenance. The handle is made with reinforced laminated wood which is very durable and tough, not easily deformed and strong against deterioration over time. The metal bolster is very hygienic and prevents stain and dirt from being accumulated between blade and handle.

Yo-Deba are robust, traditional Japanese knives primarily used for heavy-duty tasks in the kitchen. They are part of the Deba family of knives, renowned for their single-edged blade, capable of cutting hard items, for example tough fish bones, Chicken bones, Duck bones, Small Pork bones and Seafood too.

Yo-Deba knives, which means "Western Deba knives," feature a thick, double-edged blade providing enough weight and strength to cut through bones, slice through cartilage effortlessly, and separate fish filets without damaging the delicate meat.

Razorsharp Knife Sharpening Service

An interesting knife by from one of our customer dropped by the showroom yesterday for sharpening service. Knife was dull and slightly rusted on the surface. Gave it some cleaning and light sanding before etching it so as to bring out the damascus patterns and also help to patina the blade at the same time as well. Oxidising the blade helps to protect the blade from rust as well.

Lovely blade it turned out to be and it is sharpened and ready to perform!
