NEW COFFEE: El Salvador Miramar

Finca Miramar is named after its prime location near the ocean, where 'mar' means ocean, and 'mira' means look. It is known for its Bourbon elite, a local landrace varietal which is said to be the most prestigious of Bourbons.

The cool ocean breeze combined with heavy forest shade results in slow maturation of the coffee fruit, resulting in coffees that are high in quality and incredibly sweet.

This coffee is processed using an anaerobic washed method; one of the modern unique methods used at the wet-mill, Beneficio Las Cruces. The cherries are soaked and floaters are removed, followed by an 84 hour fermentation in a temperature-controlled environment before it is washed clean and dried.

The result is a coffee that is heavy bodied, intensely sweet with sparkling acidity, tasting of Cherry, Mango Candy, and Grapefruit.

NEW COFFEE: Kenya Kathima

Clean, crisp, and bright; this coffee comes from Kathima Factory, located at the slopes of Mount Kenya.

During harvest season, the coffee cherries are handpicked and brought to the factory where it is weighed before it undergoes the pulping process, and then fermented overnight. It is soaked for a further 24 hours and dried over 7-15 days, before the parchment is milled.

Soak in the end of summer with this coffee. Sniff in the scent of Hibiscus, followed by Apricot as you take your first sip, finishing gentle with a light linger of Oolong on your palette.

NEW COFFEE: Brazil Jean Vilhena

A first in our filter range - yeast fermented catuai from Brazil.

The Faleiros family has over 100 years of coffee growing experience, and they've always been one to keep innovating, especially with fermentation techniques. Different techniques produces different cup profile, as a result, improving the final cup quality.

In the case of this, Lallemand Oro, a special type of yeast designed for coffee fermentation is added into the fermentation process. What it does is it helps the exterior of the fruit break down and develop the sugars in the coffee, imparting a nuanced fruit character to the cup profile.

When we first got to taste this coffee, we knew we had to share it with you soonest. In this rare cup of Brazil, we taste the sweetness of Red Apple, Melon, finishing with a nutty hint of Macadamia.

NEW COFFEE: Ethiopia Nensebo Riripa

Sippin' on sunshine - This is exactly how we'll describe this coffee.

Located along the border of Bale Mountain firest in Nensbo, the Riripa washing station is one of the multiple washing stations in the region that SNAP Trading works with. SNAP Trading, a quality-focused exporting company founded by Negusse Debela in 2008 after he had a revelatory cup of specialty coffee abroad.

Coffee cherries are hand-sorted upon delivery, and depulped using a traditional Agaarde disc pulper. The coffee is then sorted by density, and soaked in fermentation tanks for up to 72 hours. After fermentation, the coffee is soaked in clean water for 2 hours, and then dried on raised bed for 14 days. Once processing is completed, the coffee is moved to SNAP's pristine dry mill, before export.

We taste Citrus, Nectarine, Papaya in this incredibly sweet and bright cup.
