早上好，享用簡單好味早餐。感恩的心。（素夏麵湯）

香煎雞蛋豆腐
做法：
先調醬汁（醬油+二砂糖+蠔油+1點點水稀釋）

平底鍋放油，油溫熱放入雞蛋豆腐，等有點恰恰再翻面，不要一直翻動，豆腐才不會破掉！
豆腐兩面煎到恰恰，移到鍋子邊邊，轉小火，放入蒜末跟蔥花，再把醬汁淋上，煮滾後稍微收汁就可以了！

Putu Piring
A delicious traditional snack that we often had in our childhoods. This steamed rice cake is filled with generous amount of Indonesian palm sugar and served with lightly salted grated coconut that adds a savoury punch. Mmmm… so sedap! 😋

80g fresh grated coconut
2 blades pandan leaf (cut into 5cm)
¼ tsp salt

130ml water
½ tsp salt
2 knotted pandan leaves

200g rice flour
3 blades pandan leaf (cut into 5cm)

100g palm sugar (finely shaved)
8 saucer moulds (7cm diameter)

Yields 8 pcs

1. Mix fresh grated coconut with salt. Steam with pandan leaves for 8 mins and let it cool completely.
2. Combine water + knotted pandan leaves in a saucepan. Add salt and bring it to a boil. Then simmer for 5 mins, remove and let cool.
3. Dry fry rice flour with pandan leaves on medium heat for 5 mins. When done, take it off the heat to cool and remove pandan leaves.
4. Drizzle the “pandan favoured water” bit by bit to the roasted rice flour. Use a fork to crumble the wet dough. The end result should be breadcrumbs like texture.
5. Next, run the flour mixture through the sieve to get a uniform moist sand like texture. Cover and let it rest for 30 mins.
6. Spoon rice flour into a saucer mould. Add palm sugar and top with rice flour. Scrape off excess flour and gently pack down.
7. Place the filled saucer moulds into steamer. Cover and steam for 4 mins, then remove the moulds and continue to steam for 3 mins.
8. Remove the steamed rice cakes and place them on a plate. Serve with grated coconut and extra pandan leaves for fragrance. Enjoy while it’s steaming hot!
