Santiaga unveils a New Monsoon Tasting Menu

Pipian verde's roots run deep! This vibrant green sauce predates the Spanish colonisation in the 1500s. In fact, most of its ingredients reflect its deep connection to the land.

There are many pipian variations, both Mayan and Aztec including green and red, the green pipian (pipian verde) being made with ingredients such as pumpkin seeds, green chiles, tomatillos and lots of green herbs.

This forms the base of our main course on our new Monsoon menu; Dry aged duck in pipian verde served with fresh pressed tortillas - book now to try it for yourself!

Translated literally "Aguachile" means "chilli water" although there is far more to this traditional Mexican seafood dish than just chilli (we use cascabel)

We serve our aguachile negro with yellowfin tuna that is dry aged in-house then hay smoked in the Japanese "warayaki" technique where the burning straw helps to infuse the dish with a gentle smoky flavour while achieving very fast and even cooking. The high temperature sear the outer layers, locking in juices and leaving the centre of the fish tender and delicious.
