M1.김치찌개(Kimchi Jjigae:แกง กิมจ)-CN

韩国人的家常菜中少不了的是叫‘炖汤’的汤料理,之中最常吃的就是‘泡菜炖汤’。

泡菜炖汤是世界人也非常熟悉的韩国传统料理,是在泡菜中放一点水,再加豆腐和肉等材料煮熟后,用辣椒粉调味的辣味料理。‘泡菜炖汤’还可以是接近韩国泡菜的一种捷径,所以在这里给大家简单介绍吧。

泡菜炖汤是韩国人最喜欢吃的汤料理,但那历史却只有100多年,比较短暂。

19世纪,韩国引进、栽培白菜,用辣椒粉调味成的泡菜也开始摆到了日常餐桌上。

当时每顿都吃泡菜,吃剩的或时间久而变酸的泡菜,不好直接吃,就放到水中煮成了‘汤’。我认为,这种吃法自然而然发展成了现在的‘泡菜炖汤’

做泡菜炖汤时使用的是熟成(发酵)很长时间变酸的泡菜。如果使用刚腌制的泡菜,从汤水中就吃不到泡菜特有的深味。

基本的泡菜炖汤,在熟成变酸的泡菜中放水后,加猪肉,凤尾鱼,豆腐等材料。有时为了好让年轻人喜欢,也加一些午餐肉,金枪鱼,鱼丸等材料。但,这些材料都单独和泡菜一起煮,而不是全部放到一起。

在这里用辣椒粉和盐等调味料,按自己的口味调味后享用。

韩国人常吃的是放猪肉煮的泡菜炖汤。

没加火的泡菜口感比较脆,但放入水中煮熟的泡菜,吃起来非常嫩,汤水里也有适当的辣味和酸味。泡菜炖汤里的猪肉的口感特别筋道,味道也特别香。

在韩国旅行时被泡菜满足了的话,这次就吃泡菜炖汤,尝一尝泡菜的另一魅力吧。

M1.김치찌개(Kimchi Jjigae:แกง กิมจ)-EN

Koreans eat rice with soup like Jjigae almost all the time. And the most popular and common one is called Kimchi Jjiae.

It’s made by boiling water with well-known Korean traditional food, Kimchi, along with tofu, meat and other ingredients as you like.

It’s another way to enjoy Kimchi so I’m going to introduce it to you.

Although Kimchi Jjigae is one of Koreans’ favorite soup recipes, its history is merely 100 years.

Koreans started to produce napa cabbages since the 19th century and the recipe using napa cabbages and red seasoning sauce was introduced and passed down to later generations since then.

It’s believed that the leftovers from every meal or those that are too old to eat have been naturally used in Jjigae by boiling them in water.

Kimchi Jjigae should use Kimchi that’s fermented enough to taste sour. Raw Kimchi that’s just made does not have a deep flavor or scent.

Put fermented Kimchi into water and add pork, fish(anchovies) and tofu in it. For young people, you could always add canned ham instead, and add more seasoning such as chili powder and salt according to your preference.

Regular and original Kimchi Jjigae uses pork.

Raw Kimchi is crunchy but Kimchi boiled in water is so soft and that makes the soup taste sour and spicy. And greasy pork meat is chewy and tasty.

4. Kinds of Kimchi Jjigae

Kimchi Jjigae is easily found on anyone’s dinner table in Korea so there are so many recipes according to the cook’s preferences. Meat and tofu is usually added but some add ham or canned tuna for children.

- Regular Kimchi Jjigae: Boiling water with Kimchi in it and adding tofu at the end

- Pork Kimchi Jjigae: Adding pork meat to regular Kimchi Jjigae

- Tuna Kimchi Jjigae: Adding canned tuna to regular Kimchi Jjigae

- Ham Kimchi Jjigae: Adding ham (canned hams like Spam ham) to regular Kimchi Jjigae

どと一緒に油をひいた鉄板で炒める。江原道春川(カンウォンド・チュンチョン)の郷土料理。

铁板鸡 先将鸡肉切成块状,用辣椒酱腌制一下,煎锅烧热下油后,将腌制好的鸡肉连同
圆白菜、红薯、胡萝卜、年糕等一起翻炒至熟即可,是江原道春川的乡土饮食。

========== Geot-jeori ==========
Fresh Kimchi Lightly salted Napa cabbage or lettuce mixed with soy sauce, red
chili pepper, and sesame oil and served. With a refreshing taste, it is the only kimchi
seasoned with sesame oil.

浅漬けキムチ 軽く塩漬けにした白菜やちしゃなどを、醤油や粉唐辛子、ごま油などの薬味で和
えて食べる即席キムチ。サラダ感覚であっさりと食べられる。

鲜辣白菜 将白菜、生菜等用盐稍微渍一下,或者直接用酱油、辣椒粉、香油等拌在一
起食用,口感比较鲜爽,是唯一加入香油的一种泡菜。

========== Kkakdugi ==========
Diced Radish Kimchi Cubed, bite-sized radish seasoned with red chili powder and
salted and fermented shrimp. Kkakdugi is a required side dish for seolleongtang (ox
bone soup).

カクトゥギ 一口大のさいころ型に切った大根を塩漬けにし、唐辛子やねぎ、にんにく、生姜、
アミの塩辛などを混ぜて漬けたキムチ。

萝卜块泡菜 萝卜切成丁,腌渍以后拌入辣椒粉以及葱、蒜头、生姜、虾酱等进行泡
制,是喝先农汤的时候必配的泡菜。

========== Chonggak-kimchi ==========
Whole Radish Kimchi Whole or half-split young white radishes, with the leaves on,
salted and mixed with red pepper powder and seasonings.

ミニ大根キムチ ミニ大根を葉ごときれいに洗って塩漬けにし、粉唐辛子などの薬味をまぶし
て漬けたキムチ。

嫩萝卜泡菜 将嫩萝卜带缨洗净,个头比较大的适当切开,用盐腌渍,然后用辣椒粉和
各种调味酱拌匀泡制。

========== Baechu-kimchi ==========
Kimchi Salted Napa cabbage stuffed with a mixture of julienned white radish, red chili
powder, minced garlic, and salted fish. Along with rice, kimchi is a required dish with
every Korean meal.

白菜キムチ 塩漬けにした白菜の間に細切りにした大根や粉唐辛子、にんにくのみじん切り、塩
辛などを混ぜ合わせた薬味をまぶして漬けたキムチ。韓国の食卓に欠かせない一品。

辣白菜 在盐渍过的白菜叶片之间拌入用萝卜丝、辣椒粉、蒜蓉、鱼虾酱等制成的调味
酱料而成。辣白菜泡菜和米饭是韩国人餐桌上的必备食物。

Cheongguk-jang : 청국장

Rich Soybean Paste Stew A thick stew made of beef, tofu, kimchi and other
ingredients in a broth seasoned with cheonggukjang (quick fermented soybeans).

チョングクチャンチゲ だし汁に肉、キムチ、豆腐、唐辛子などを入れ、チョングッチャンを溶い
て煮た鍋。チョングクチャンは蒸した豆を温かい場所に置き、短時間で発酵させたもの。

清麴酱锅 清麴酱是将煮熟的黄豆放在温热的地方快速发酵而成的食品,在高汤中放
入肉、辣白菜、豆腐、辣椒等,再加入清麴酱熬煮即可。

Galbi-tang : 갈비탕

Short Rib Soup Beef ribs, soaked in cold water to remove the blood, and white
radish chunks simmered together until tender. The clear stock is rich and savory, and
the tender meat falls off the bone. (Glass noodles may be added.)

カルビタン ぶつ切りにした牛カルビを大根と一緒にじっくり煮込んだスープ。スープの豊かな風
味と骨ごとかぶりつくカルビの味は絶品。春雨を加えることもある。

牛排骨汤 用牛排骨熬的汤,牛排骨浸泡去血后与萝卜一起熬煮至肉烂,不但汤汁香
醇,手抓排骨啃肉的感觉也很畅

Korean Sausage and Rice Soup This dish consists of sundae, steamed pig intestines stuffed with seasoned, minced vegetables, and rice with soup. Perilla seeds, ginger, and a variety of medicinal herbs are boiled with the sundae to remove any unpleasant meat smell.

血肠汤饭 用血肠熬制的汤饭。血肠是猪大肠里灌入各种蔬菜和调料后放进蒸笼里蒸 煮而成,熬汤时放入适量的白苏子、生姜和中药材等以去除腥味。
