Tasting Notes
Here are a few tips on how to savor the bold and subtle differences among the olive oils.
Color
Examine the color. The two most important factors influencing the color of the finished oil are the variety of olive and its maturity at the time of harvest. Early-picked olives yield dark, greener oil, while ripe olives produce an oil that is lighter and more yellow in color.
Taste
Taste the oil either by dipping a piece of white bread into it or by drawing a teaspoonful of oil quickly into the mouth, mixing it with air to register the sensation of all the nuances of flavor. Between sips, cleanse the palate with a piece of crisp apple, fresh sliced fennel or unflavored sparkling water.
Tasting Advices
Cut a loaf of white bread (or any bread with mellow taste) into small pieces, cubes of 1/2 - 1" thick
Pour the olive oil in a small cup or plate.
Having some water available is always good, but the best way to change from one oil to another without mixing flavors is with a small bite of green apple.
SALAD WITH TUNA FISH
Ingredients:
200 g tomatoes, ripe but Firm
300 g red peppers
100 g onion
3 garlic cloves
100 g tuna fish in oil
Juice of 1 lemon
1 tsp caraway seeds
50 g capers
50 g black olives
150 g green olives
2 hard-boiled eggs, Quartered
Salt
Procedure :
Bake or grill the tomatoes, peppers, onion and garlic cloves, turning occasionally and removing them as soon as they are done. Place immediately in a covered container until warm, then skin and remove the seeds.
Cut the tomatoes and pepper into small pieces.
Place the tuna fish in a blender with the baked onion and garlic. Blend until creamy. Add the lemon juice, caraway and capers. Serve with the tomatoes and peppers dressed with olive oil.
Garnish with the olives and hard-boiled eggs.
History Olive oil
For thousands of years, olive oil had been prominent in all the great civilizations that have prospered in Tunisia. The olive tree was cultivated by the Phoenicians, the Greeks, the Carthaginians, the Romans and the Arabs, in a tradition that has been passed down from father to son ever since.
Olive cultivation in Tunisia dates back to the 8th century BC, even before the founding of Carthage by the Queen Dido. The Phoenicians were the first to introduce this crop to North Africa.
In the Carthaginian period, olive cultivation started to spread an account of several advantages granted to olive-growers.
Romans continued the expansion of olive-growing stepped up irrigation, olive oil extraction techniques. Excavations at Sufeitula (present-day Sbeitla) and Thysdrus (El Jem) and Roman mosaics discovered in Sousse, attest the widespread culture of olive-trees throughout Tunisia.
Tunisia is the largest olive oil producer outside the European Union, and comes fourth in the world following Spain, Italy and Greece.
Since ancient times, olive oil was used for various purposes: Athletes used it to massage their muscles to make them suppler, women used it to keep their skin looking young, it was thought to be a strengthening tonic which helped prevent baldness, and with addition of wine and spices, it was used for cosmetic.
The collection of the archeological and ethnographic objects and utensils attest the importance of olive oil in the everyday life and people’s art living throughout the History of Tunisia.
Olive oil & Cholesterol
Olive oil lowers the level of total blood cholesterol, LDL-cholesterol and triglycerides.
At the same time it does not alter the levels of HDL-cholesterol (and may even raise them), which plays a protective role and prevents the formation of fatty patches, thus stimulating the elimination of the low-density lipoproteins.
The beneficial effect of olive oil consumption with regard to cardiovascular disease has been demonstrated in primary prevention, where it reduces the risk of developing the disease, and in secondary prevention, where it prevents recurrence after a first coronary event.
