莊園主人Monsalve Botero是一位咖啡和釀酒方面的專家。在他多年大膽的實驗和研究後，成功地創造了一款獨特的咖啡風味——蘭姆酒桶發酵咖啡豆。

這款咖啡結合了蘭姆酒、龍舌蘭酒、青蘋果、葡萄、萊姆和生可可等多種風味，每喝一口都是一場多元且豐富的味覺之旅。

似乎也不是什麼太令人驚訝的事。

每天清晨
我們會騎著單車
順延著被法國梧桐樹佔據的街道
穿越燒餅油條的中式早餐店
朝那迎面飄來的麵包烘培味
緩和卻又迫不及待的移動。

由於當時僧多粥少
喜歡的麵包經常會被搶購一空
因此我們的腦筋
便移到家中房東附帶的那台烤箱。

在從書店挑選了幾本
關於麵包烘培的書後
從培養酵母菌開始
我們的自家手作烘培之旅
就此開始

以下是幾個最令我們難忘的第一次：

PIC 1 - 第一個生日禮訂單：每一份禮物都是我們精心手繪製作，這也讓我們回想起對手工藝品的熱情。

PIC 2 - 第一篇 IG 貼文：當坐在店裡觀察窗外的世界時，腦中就會想起米蘭·昆德拉在《緩慢》一書中提到的一段話。

PIC 3 - 第一次窗貼原型：以簡便的紙膠帶，先確保我們的店名在遠距離依然清晰可見，再外發輸出。

PIC 4 - 第一杯拉花：每日的拉花練習就是從這時候開始的。

PIC 5 - 第一座立標完成：濃縮小姐☕️ 和可頌先生🥐 就此開始攜手私奔。

PIC 6 - 第一個大型麵包櫃：即使酵母寶寶很有個性，我們每天依然提供新鮮自家手作的麵包與甜點。

This is a tale of an ordinary mountain monkey transforming into a legendary gorilla.

我們幾乎 100%可以預期在這段時間裡，白天的氣溫可能會超標，但夜晚反之會有些涼意。而這種戲劇性的溫度變化，將會強烈地影響酵母寶寶在發酵過程中的活躍性。

即便我們已為酵母寶寶創造了一個非常合宜的生長環境，但當大自然準備掌控一切時，我們最好的解法便是隨遇而安。

Ever since we introduced TGIF Toast earlier this month, your love for it has surpassed our wildest expectations. (Thank you!)

As an expression of gratitude for your appreciation of our toast, and as part of our commitment to continuously improving our product's quality, we'd like to inform you that we're moving the sales of TGIF Toast to Saturdays, starting this week (9/2).

If you're wondering about the impact of shifting by a day on the toast, we'd like to share some of our bread-making R&D secrets and learnings with you.

As you may have noticed, we're entering the pre-fall season where temperature and humidity become remarkably unstable. During this time, we could experience high temperatures during the day while it gets slightly chilly at night. These rapid temperature changes significantly affect the activity of our baby yeasts during the fermentation process.

Despite creating an optimal environment for our baby yeasts, when Mother Nature takes charge, it's best to adapt accordingly.

We're confident that providing our baby yeasts with extra time to be active and rest will result in a superior taste. We're sure you'll also concur once you sample our TGIF toast this week.

在將桌椅（不斷地）重新排列組合後，我們可以很肯定的說，位於角落的座位（暫稱角桌）在獲得最多來客的目光及青睞後，是目前最大的贏家。（連晨光也特別眷戀它）

沒有要貶低其他座位的意圖，因為我們為每個座位，都特別設定了它們的用途。而這個角桌，恰恰滿足了所有我們在開店初期時，對這個空間的想像：

After a few rounds of table arrangement (more like playing around), we can now proudly call this corner table a winner since it’s got the most attention and occupancy.

Don’t get us wrong. The rest of tables are equally great for their own particular purpose. But this corner table contains all the purpose we wanted to create for our cafe since day one.

Studying, working, chilling or even daydreaming. You name it, it seems to serve perfectly for all.

/ 關於可頌與濃縮咖啡的故事/

幾週前看見大批朋友不約而同地放送米蘭設計週的照片，我們的心跳瞬間失速，回想起不久前（在疫情和一切關於它的瘋狂事跡發生前）我們也在那裡。

那天我們起了個大早，走在仍舊未醒，四處充滿初春水氣的米蘭街道上，瘋狂地找尋像我們一樣早起的咖啡廳，渴望能在忙碌的一天開始之前，獲得到一些些新鮮的能量。

在迷霧中我們彷彿瞄見一家咖啡廳，它那微微閃爍的招牌周圍，正被一股濃郁的烘烤氣味包覆著。我們推開了門，迎面撲來的是濃縮咖啡及剛出爐可頌的香氣。

那是個平凡但又令人極度喜悦的時刻。

如今，在我們自己的 cafe 裡，我們以自己的方式，慶祝那些一起經歷過的挑戰。也用我們親手準備的餐點，隨時溫暖那些願意和我們共享回憶的人。

/ A croissant & espresso story /

A couple of weeks ago, our hearts skipped a beat as soon as we saw friends posting pictures from Milan Design Week. It reminded us of a time not so long ago, before the pandemic and all its craziness took all of us by storm, when we were there, too.

Still remember we woke up early in that particular morning and wandered through the still-sleeping Milan streets filled with the early spring mist, searching desperately for fresh energy before starting another busy day.

We stumbled upon a café with a slightly flashing sign but a strong smell of baked goods in the air. We opened the door and were greeted by the aroma of espresso and freshly baked croissants.

It was a simple yet delightful moment.

Looking back on this memory, we feel nostalgic for those little moments of joy in life, just as we celebrate and embrace the challenges we've faced together in our own way. In our cafe, the meals we prepare are especially for those who have shared memories with us.

Wednesday (4/19) will be our regular weekly day off, and we will add one more day for Thursday (4/20), too.

Down in the south the weather very often plays temperature tricks during morning and evening in which people get fooled by an untruthful feeling that cold front is here to stay. That’s why when the temperature starts to hit 30 plus degrees, people would appreciate having a more comfortable indoor dining environment.

So as you might have guessed the main reason for our two days off in the coming week is for the air conditioning upgrade. Please take note.

Here comes our next journey.

After years of planning and searching, we have finally opened our very first store. It’s a cafe located inside a 4-star hotel in Chiayi City, a place of wonder and beauty that captures the hearts of visitors from all over the world. With its lush greenery and serene landscapes, it's hard not to fall in love with the city's natural charm.

We want to thank all of our supporters who have been with us on this journey so far. Our journey, of course, doesn't end here. We will continue to thrive to constantly evolve and improve our cafe experience, and look forward to expanding our reach to new locations in the future.
