經營餐廳,剩餘食材是難免的,尤其有些蔬果的保鮮期較短,我們是很不喜歡浪費的人,通常除了將它們變成自己的員工餐以外,也會將消耗不完的食材製作成餐盒,發送給無家者。
圖片中是情人節準備的餐盒,和大家分享的目的是期望大家也能盡己所能付出善意,讓我們一起相信善循環,讓世界更美好 🙏💝

Running a restaurant, having surplus ingredients is inevitable, especially with some fruits and vegetables having a short shelf life. We are strongly against wasting food. Typically, apart from using them for our staff meals, we also transform excess ingredients into meal boxes and distribute them to the homeless. The picture shows meal boxes prepared for Valentine's Day. Sharing this is aimed at encouraging everyone to contribute goodwill within their capacity, believing in the cycle of kindness to make the world a better place together. 🙏💝

天氣寒冷,想在家裡享用美味濃郁、熱呼呼的印度奶茶嗎?分享最簡單的步驟:
1. 選一個漂亮的杯子
2. 用杯子量7~8分滿的水倒入鍋中
3. 鍋中加入幾片薑及茶包(最好是阿薩姆紅茶)
4. 待茶與薑片煮滾後,依照個人口味加入糖和鮮奶,沸騰即關火

The weather is cold, and you want to enjoy delicious, warm Indian chai at home? Here are the simplest steps to follow:
1. Choose a beautiful cup.
2. Pour 70~80% cup of water into a pot using the cup as a measure.
3. Add a few slices of ginger and tea bags (preferably Assam black tea) to the pot. 4. Once the tea and ginger slices come to a boil, add sugar and fresh milk according to your personal taste. Turn off the heat when it boils.

這幾天UberEats的訂單也明顯變多了,看來大家果然都很聰明,超冷的天氣就是要早早回家,窩在家裡叫外送吧?

今天我們想簡單地分享一點心得。
一開始我們就設定要往Vegan、Plant-based的方向走,其實是一個具挑戰性的決定。
對一些「嚴格地在意正統」的客人而言,我們也收到不少的指教甚至批評,而客人所追求的「正統」,並不只是對於「口味」,還有對「食材原料」、「價格」的要求。
舉例而言,有些台灣客人認為我們應該完全捨棄洋蔥、大蒜等,以符合「純素」的標準,而一些印度客人則會認為我們的乾酪不是真正的起司,因為它不是乳製品,而是使用植物奶做成的,類似豆腐口感的替代品。
遇到這種情況,通常我們只能安慰自己,畢竟是不可能討好得了所有人,我們就致力於精進食材的品質和成品的口味就好。但偶爾一些客人的情緒比較激動,不論是口語或文字表達都比較未經思考的情況之下,總是會有那麼一瞬間,真的覺得很辛苦啊!
我們的料理的初衷,是希望台灣人(無論素食與否)可以品嚐屬於印度的家庭風味的蔬食,同時也讓在台灣的印度人回味熟悉的滋味。

至於價格的部分,那就真的是沒有什麼好多說的,不喜歡的東西就算10元都會被嫌貴,偏偏少部分人很喜歡一直點購又要一直嫌,那就真的是傲嬌了。

Today, we'd like to share some insights. From the beginning, we set out on a challenging journey towards a Vegan, Plant-based direction. We've received feedback and criticism, particularly from those who strictly adhere to traditional norms. The pursuit of "authenticity" for our customers extends beyond just "taste" to include demands on "ingredients" and "pricing." For instance, some Taiwanese customers feel we should completely abandon ingredients like onions and garlic to meet the "vegetarian" standard, while some Indian customers question if our non-dairy cheese is authentic because it's plant-based, resembling the texture of tofu.

In such situations, we console ourselves, understanding it's impossible to please everyone. Our focus remains on refining the quality of ingredients and the taste of our dishes. Occasionally, dealing with emotionally charged customers, whether in spoken or written expressions, can be quite challenging. Our culinary intention is to offer Taiwanese people, whether vegetarian or not, the opportunity to savor the authentic flavors of Indian home-style vegetarian cuisine, while allowing Indians in Taiwan to reminisce about familiar tastes.

As for pricing, there's not much to say. Disliking something could make even a 10 NT dollar item seem expensive, while a small percentage of people continuously order and complain, a true paradox.
