芫荽學名:Coriandrum sativum
Hindi: धनिया(dhaniya) Tamil: கொத்தமல்லி(kottamalli)

芫荽,又名胡荽、香菜、鹽須、香茜。芫荽籽是印度咖哩、中東料理和許多東南亞菜的基底香料之一,在黑芥末籽的介紹篇幅裡,也有提到他。風味帶有堅果般的成熟溫暖,又略帶一點辛味及類似柑橘的酸味。

芫荽籽顆粒和製成細香料粉時,風味並沒有明顯變化,通常使用時的差異在於全粒及半研磨粗粒,較適合作為醃肉調料、爆香用的風味基底,而細粉的質地則讓其風味可以融入麵團、麵糊中。

With a warm, nutty-spicy mixture with a hind of citrus aroma - coriander seeds are known around the world in various names, such as Dhania, Dhaniya, Chinese parsley, etc.. Earlier in our short clip of black mustard seeds it has a brief appearance as well.

Often used as basic spice ingredient in cuisines of diverse regions in India, the Middle East, South Eastern Asia and Latin area, the whole coriander seeds and it’s ground powder are both extensively applied. While there is no obvious, distinguishable difference between the flavors of ground and whole coriander, the texture of the powder works best for adding flavor into doughs and batters, and whole or gently cracked seeds are best for meat rubs, chutney and building the essential flavor of tadka(tempering).

孜然的氣味及風味獨特強烈,在各國料理中,尤其印度咖哩、燒烤肉食,是常見而近乎必備的香料。解油膩去腥膻的作用強烈,在南亞,中東,北非,新疆,歐洲都有使用孜然烹飪的傳統。

孜然又被稱之為阿拉伯茴香、安息茴香,在外觀上和藏茴香(Caraway)及茴香(fennel)相近,只以外觀判別容易混淆,但氣味及口味完全不同。

在烹飪時,你會有自己的小小儀式感追求嗎?黑芥末籽在鍋中的跳躍,對我來說就像是美味開幕儀式之舞一樣,以聲、色、香、味,全方位展開美味與記憶的時光。�

芥菜類蔬菜,常見三類型的籽,可用於烹飪:黃芥末籽,褐芥末籽,和黑芥末籽。各色芥末籽在各國料理中,應用廣泛,像是法國菜裡的第戎芥末醬Dijon mustard (Moutarde de Dijon),美式三明治及漢堡、熱狗,英國炸魚薯條必備的黃芥末醬,中餐的芥末墩兒,還有印度咖哩的綜合香料粉及調溫浸混、回火的烹調過程。應用在漬物醃菜中的歷史據傳可追溯至古羅馬時代。

和東亞地區也許較熟悉的「綠色芥末」(wasabi,正確名稱是山葵)相比,芥末籽雖然帶有嗆鼻辛辣的特徵,卻較溫和,較容易與其他香料搭配。

今天要介紹的是加熱後會釋放出堅果風味的黑芥末籽。

�黑芥末籽

學名:Brassica nigra

黑芥末籽的風味,在幾種芥末籽中最顯著,但是全粒香料和磨碎時,會有不同效果。芥菜子本身沒有味道,但以完整顆粒入鍋加熱時,卻會釋放出堅果、煙燻般的香味,融入食材的油脂之中。如果將黑芥末籽壓碎、研磨並與水調和,才會產生辛辣嗆鼻的感覺。

在印度料理中,以全粒入鍋,加溫油浸的過程,稱之為tadka,英文對應的字彙是tempering,臺菜中菜的說法,就是爆香。 (是不是簡潔有力多了)

許多臺菜料理的第一步是爆香蔥薑蒜,而不少印度料理及咖哩的第一步,是於依序鍋中加入黑芥末籽、孜然、芫荽子,在南印度則時而是咖哩葉、黑扁豆、新鮮青辣椒。調理時適合搭配的油脂,可選擇葵花油、椰子油、印度酥油(ghee)。

隨著黑芥末籽等辛香料,在加溫過程中香氣的釋放,以豐富多層次聞名的印度咖哩,第一層氣味(與營養)也建構完成。在熱鍋中跳耀的黑芥末籽,對我來說就像在引領美味盛典開幕之舞一樣,以聲、色、香、味,全方位展開美味與記憶的時光。在烹飪時,你會有自己的小小儀式感追求嗎?黑芥末之舞,對我來說是小小的浪漫與安定效果 ─ 他們在這裡跳舞,所以料理好吃的首要步驟達成。

Sambar Saturday – Sambar Sadam
A quick and easy dish that is perfect for Saturday mornings.
一鍋料理介紹之15分鐘煮好南印燉飯

Because Friday evening parties lead to Saturday brunches. :p
為什麼今天是介紹一鍋料理,因為每逢週五晚睡,週六會想吃簡單易煮的早午餐。

Sambar Sadam, or Sambar rice, is appetizingly delicious and its widely accepted flavors make it an ideal choice for game nights, lunchbox, or daily menu for people with limited kitchen space. It takes only about15 minutes to prepare.
在Tamil語中稱為Sambar Sadam的這道燉飯類料理,不僅開胃、好吃,口味接受度也很高,很適合當作遊戲聚會、便當菜,或是廚房空間小的人的常備菜。實際烹飪時間大約15分鐘就能做好的簡單一鍋料理。

1. Chop all the seasonal vegetables you wish to put into your Sambar Sadam. Typically like okras, tomatoes, and gourds. Wash and soak toor dal and put it into a pressure cooker for 3 whistles, once fully cooked, smash and keep aside. Pressure cook the rice and keep it aside.
切好所有想放到燉飯裡的季節蔬菜,像是番茄、秋葵、瓜類等等都是典型會出現的搭配。然後把樹豆仁洗淨充分浸水,放入壓力鍋中,印度壓力鍋鳴笛三回後,確認熟透就可以壓碎靜置。同時用快鍋把煮飯好。

2. Prepare a pan, heat oil, then add in chana dal, coriander seeds, black pepper, red chilli, and saute them till golden brown. Move this into a food processor to grind along with grated coconut and water. Make into a fine paste.接下來要準備平底鍋熱油,加入鷹嘴豆(可以偷懶用罐頭,老闆娘自己在家煮的時候會這樣,老闆在家則會堅持用印度chana dal)、芫荽子、黑胡椒、紅辣椒,炒至金黃再放到食物調理機中和椰子絲、水一起打成細糊。

3. Heat oil with medium flame in a pan. One by one add in black mustard seeds, asafoetida, red chilli, fenugreek seeds and curry leaves. When spluttering, add chopped onions and saute till transparent, then add all the vegetables and stir-fry.
平底鍋用中火熱油,陸續加入黑芥末子、阿魏、紅椒、葫蘆巴子、咖哩葉。等香料開始在鍋中跳躍就可以加入洋蔥炒熟,再把切好的蔬菜加入一起扮炒表面炒香。

4. Add water and cook for 2 minutes or till vegetables are half cooked. Then add turmeric powder, salt, tamarind juice and cook again for 3 minutes
鍋中加入水煮兩分鐘,或煮至半熟,再加入薑黃粉、鹽巴、羅望子汁(羅望子糕泡水即得),再煮三分鐘。

5. Add mashed toor dal, your masala paste, and mix them well with the vegetables. Add cooked rice along with water and simmer for 5 minutes. Then you’re ready to serve.
把壓碎的樹豆泥、步驟二的綜合香料糊和蔬菜一起混和均勻,再加入煮好的飯和適量水,小火燉5分鐘。就可以上菜囉。

今天來介紹羅望子

When heat and humidity hits, nothing is more appetizing and soothing than soup and sauces with natural tanginess and sweetness from tamarind. Seen in cuisines around the world, tamarind has an essential part in Worcestershire sauce and HP sauce(in Japanese and Western recipes), Agua Fresca, Thai satay sauces, and of course in South Indian sambar, rasam, and mango chutney.
悶熱的時候,帶有天然酸甜味的各式羅望子湯和醬料最為開胃。羅望子在世界各地的料理中都有出現,像是日式料理和西餐中的伍斯特醬(Worcestershire sauce)、HP Sauce、中南美洲的涼水凍飲Agua Fresca、泰式沙嗲醬、當然還有南印各種蔬菜湯與芒果沾醬裡,酸味主役就是羅望子了。

In Ayuveda food guidelines, tamarind are often mentioned when treating digestive discomfort, dysentery, cold, and joint inflammation, likely because it contains rich B vitamins, vitamin C, and calcium.
在阿育吠陀飲食指南中,羅望子不但在治療消化不適、調節腹瀉與感冒症狀時被提及,也在調節關節炎時少不了其身影。大概是因為羅望子果實含有豐富的維他命B、維他命C、和鈣質吧。

喜歡吃地中海美食的人,一定對月桂葉不陌生。許多人初次見到月桂葉,也許是跟當年的小編一樣不知道為何馬鈴薯湯上漂浮著一片乾葉子吧! 彷彿西餐湯品或是義大利麵上擺弄了幾片乾燥月桂葉,就更加「高貴正統」,只是月桂葉在餐點呈現和調理中究竟扮演什麼作用呢?
For people who enjoy Mediterranean food, bay leaves are more than “just acquaintances” – but perhaps for many, especially in Taiwan, just like me, it was a strange feeling seeing a piece of dry leaf floating on top of my potato soup when first approaching “Western Food”. It was as if the whole of a restaurant is more “authentic and classy” if some bay leaves were garnished on top of the soup of spethetti. But what do bay leaves really do in food?

在台灣常見的西餐裡,月桂葉濃烈的木質香氣,往往用來搭配燉煮料理和煙燻料理,像是煙燻德國豬腳、法式油封鴨、紅酒燉牛肉、羅宋湯、奶油海鮮濃湯等等都往往可以看到月桂葉的身影,因為月桂葉能和這些味道濃郁的食材互相襯托,呈現更多層次的風味,長時間熬煮後,還會產生清爽的甘甜味,亦能幫助肉類去腥。
In the western restaurants in Taiwan, bay leaves, with their strong wooden aroma, are often seen with cuisines that require stewing or smoking in the process, like Schweinshaxe, Duck Confit(Confit de Canard), Beef bourguignon, Borscht, and creamy seafood soups. This is because bay leaves adds flavor layer to the food ingredients with strong fragrances, and after long hours of cooking, they create refreshing sweetness while removing the gamey smell of meat.

Bay Leaves in Chinese Foods
月桂葉堪稱台式滷味滷汁的梁柱,平衡了八角、肉桂、胡椒及甘草等香料的味道。雖然名字滿滿的西洋感,卻非常融入台灣美食小吃,總讓我有種外國藝人在台灣默默耕耘了多年的想像。其實在鹽水雞、白斬雞的調味中,許多餐廳也會使用月桂葉來增加風味層次,讓肉品更加鮮甜。馬鈴薯燉肉中,也可以使用月桂葉提昇香氣,讓醬汁更口味更加豐富。
Pillar to the Lǔwèi sauces (or Lou mei , stewed and braised dishes), bay leaves balance out other spices such as anise, cinnamon, pepper and licorice. Though the name “Bay leaf” sounds more foreign than local, it is well integrated into Taiwanese recipes. It often gives me an image of a hard-working artist in entertainment, who somehow have been striving and proving himself for years on local channels. In fact, in preparing white sliced chicken(poached chicken) and brined chicken, many restaurants and eateries would also elevate the flavor complexity, and enhance the natural sweetness of meat with bay leaves. In home-style pork stew with potato, bay leaves can also be added to compliment the aroma, and to add a bit playfulness to the simple sauce base.

月桂葉在印度咖哩和東南亞咖哩和美食中也扮演著重要角色,像是泰式瑪莎曼咖哩(Massaman curry)、印尼炸雞(Ayam Goreng)、緬甸米線(Mohinga)還是印度料理中的Pulao香料飯(關於各式各樣的香料飯我們會找機會陸續專題分享)、甜辣奶油起司咖哩(Paneer Makhana)、番茄濃湯、不少鷹嘴豆咖哩(chana masala)等等,都會使用月桂葉。
Bay leaves as well play an important part in Indian curries and Southeast Asian curries and dishes. For instance, Thai Massaman curry, Indonesian fried chicken Ayam Goreng, Burmese noodles Mohinga, Indian Pulao, Paneer Makhana, creamy tomato soup, stypes of chickpea curries, etc., bay leaves are there as an essential herb.

What is Authentic Indian Cuisine?

India, a land where every mile, there is a change in the taste of water and every 4 miles there is a change in language.

With such diversity, we have never understood what people mean, when they call it authentic Indian Cuisine.

Every Mother cooks with all the love and transfers her knowledge to the next generation. And to me, authentic is what my Mother Taught me, to you, authentic is what your mother thought you.

Now, if I were to say, my food is more authentic than yours, All I am saying is my mom is more authentic than yours. This is a baseless absurd argument that one should never engage in.

Let's take a simple example. Sambar, a south Indian soupy delicacy is made differently within South India. So much difference in appearance, taste, texture due to choice of ingredients available. Some cook it with coconut, some with jaggery, some spicy, some sour, some thin, some thick, the permutations and combinations are endless and all to us are authentic

Likewise, we can share many examples. Think of Dal Makhani. Some make it with Urad Dal, Some with moong, some with a mixed dal choice for even more creamy rich texture. Now, where should we find what is authentic?

My dear friends, there is no patent that protects a dish to be cooked in a particular way.

Authenticity is your honesty in addressing the needs of a customer.
Authenticity is your fight with your own self to do better each day.
Authenticity is your passion to deliver good home food on a plate.
Authenticity is your effort to make Indian food accessible, affordable and appreciable to everyone.
