WHAT IS GOAT MEAT?
Goat meat, also known as a kid (young goat) or chevon (adult goat), is a type of red meat from the domestic goat.
Goats are one of the earliest domesticated animals that efficiently produce both milk and meat.
Goat meat is naturally lean, containing less saturated fat and cholesterol. Due to its leanness, goat tends to dry out during the cooking process, so it is often cooked in a marinade or stew to retain its moisture. Braising or stewing goat meat low and slow with liquid (or using a slow cooker or pressure cooker) can yield succulent results.

AS YOU MAKE MEATBALLS

The trick is "do not over mix"

Keeping meatballs extra tender and juicy is not over mixing when you combine the ingredients. Over mixing makes them tough. Just mix until combined.

MINCED MEAT WITH SPAGHETTI (Bolognese)

Ingredients
Onion
Carrots
Celery
Tomato paste
Milk

In a pan, cook the Meat till browned. Add onions, carrots, celery cook until soft and drain off any fat.
Add tomato paste and simmer for 30minutes.
While the sauce simmers, cook pasta, add salt and pepper.
Add some Milk and let it simmer away until thick.
Add and mix the drained pasta to the sauce
Serve and enjoy!

MEATBALLS IN SAUCE

Heat oil in a pan and fry the meatballs till all sides are a golden brown. Put them aside and in the same pan fry onions, tomatoes which should be pureed, carrots, green pepper. When ready you can add tomatoe paste to make soup thick, add a little water and boil. Add the meatballs, cook for 5 minutes to 10minutes. Season with Parsley

PAN FRIED MEATBALLS

To pan fry meat balls, pour 3/4 cup oil into a non-stick skillet (Pan), let it heat over medium heat.
Cook meatballs in batches (so they aren't overcrowded) until golden brown on bottom. This should be about 4 - 6 minutes. Turn to opposite side and cook until golden brown.
Transfer to paper towels to drain.
You can transfer meatballs and toss them un barbecue sauce and enjoy.

GOAT LUWOMBO RECIPE

Roast/Smoke goat meat.
Cut meat in mouthful pieces
Blanch the tomatoes, chop Onions, green pepper,carrots into relatively big pieces.
Lay Luwombo leaf in a basket (ekibbo)
Mix thoroughly all the cut ingredients plus salt, royco, cotmill, garlic and stock cube.
Place half of the meat in the leaf, put half of the mixed ingredients, top it with the remaining meat and finally add remaining mixture.
Pour in some little water/stock just to reach the level of meat or half way the meat.
Cover with a small piece of luwombo leaf, then wrap the leaf neatly then fasten /tie with a small banana fiber firmly.
Place in a prepared steaming Saucepan and cover with banana leaves carefully to conserve the steam.
Steam for between 1 to 1½hrs
Serve hot

GRILLED GOAT MEAT RECIPE

Preparation for meat to be either barbecued ,roasted or grilled.

Ingredients
Goat meat -1 kg
Onions - 2
Garlic 4
Cotmill 2springs
Ek's Meat Curry 1½ table spoons
Royco -1 table spoon
Cooking oil- 2 table spoons
Salt & Pepper to taste
Tenderizer ½ table spoon

Cooking Method

Clean the Goat meat and cut into medium sized pieces.

Peel, cut and crush onions /garlic& cot mill.

Mix with salt, pepper, EK's meat curry, royco and cooking oil

Mix meat and mixture thoroughly together.

Let the mixture stand for 15 to 20 minutes ( The longer the better)

*For Barbecuing-put pieces on skewers. Use open fire or live charcoal.

*For Roasting-Skewer the meat and put on a roasting try or place them meat on the roasting tray without Skewering and then put in the Oven.

*For Grilling, meat should be filleted i.e cut in thin layers then place them on a grilling rack. Use a grill.
