🥬 How quickly can you tackle this shopping list and instructions to celebrate not only Spinach Day today but also Lasagna Day on the 29th and an entire Eggplant Month? 🍆🧀

INSTRUCTIONS:
▪️Preheat oven to 375°F. Place the eggplant slices on a lightly greased baking sheet. Brush with extra virgin olive oil and season both sides with salt and black pepper. Roast for about 15 to 20 minutes. 🍳

▪️In a large skillet over medium heat, add the olive oil, garlic, and thyme; sauté for 2-3 minutes. Add the spinach, cooking for about 3-5 minutes. Remove from heat and chop it up once cooled. In a mixing bowl, combine the cooked spinach, ricotta, egg, nutmeg, parmesan, a squeeze of lemon juice, and salt to taste. 🥄🍋

▪️Remove the eggplant from the oven and start arranging the lasagna in a Pyrex or casserole dish by adding a little tomato sauce to the bottom. Layer the eggplant, then half the spinach mixture, half the tomato sauce, and half the mozzarella cheese. Repeat using the remaining halves. 🍅🧀

▪️Cover with a foil and bake for 20 minutes. Remove the foil and bake for another 20 minutes until the cheese forms a golden crust. Let it sit for 10 minutes before serving, then enjoy it oh, so freely! 😋✨
