Sorry, it's been a while. Life kicked me in the teeth, but my divorce is final now and my house just closed so I'm back at it again. Here's one of my new favorite recipes for keto.
Please drain the chicken first!
Greek chicken wrap or Greek chicken salad sandwich with your choice of bread.
I did some steaks tonight in my stainless steel pan. They turned out so good (for such a simple prep) and my kiddos wanted these instead of their taquitos for dinner. I feel like I can't be upset about that....right?

Sucks not being able to have corn on keto, but this is my low carb tortilla work around.
If it gives you heartburn to call them enchiladas then think of them as smothered burritos.

Fruit leather is a game changer in my house. When my kids go through phases with fruit and I buy something that would otherwise rot, I make them homemade fruit roll ups for later.
I'd recommend agave instead of honey if your kids don't like the stronger flavor some honey has.

Gonna make lemonade for my boys. Time to break out the citrus juicer by pampered chef.
I've had 4 other juicers in the past several years. This is by far the best at getting out the juice plus it has a zester for those more exotic recipes for us adults.
Scrambled eggs in the whipped cream maker...yes I said it. In the whipped cream maker!
Second attempt at homemade stuffed crust pizza. I think it turned out way better!

These guys are why I started Pampred chef. They love to help me in the kitchen now and I love making them healthier meals with all the amazing tools I have in my Pampered Chef Kitchen.

My son does not like to eat eggs, but he loves pancakes and tons of things with egg in it. So today I tried a modified "Chaffle" recipe and he couldn't tell the difference. So excited!
8 eggs
8 Oz cream cheese
8 tsp keto sweetener (erythritol)
1 tsp maple extract (although it probably could use 2 tsp if you like.
Dash of vanilla extract
1/2 C almond flour
1/2 C coconut flour
Gets to about the consistency of typical pancake batter and cooks just as easy.
You can use with keto maple syrup or regular, but it reduces a ton of the carbs and I believe is gluten free unless the syrup you use has wheat in it....? Happy cooking!
