Freezer meal for the win tonight! Plan…the giant beef roast on the right. Got home at 5pm and hadn’t put it in. Even the instant pot can’t save me here if I plan to eat before 730pm. Instead pulled out some frozen meatballs I had made and whipped up a gravy (arrowroot powder, homemade chicken broth, coconut milk, seasonings) and will serve over rice. I guess we will have roast tomorrow!

My grocery budget has been out of hand lately (we usually spend around $1000 a month). Decided to take inventory of what I already owned and make freezer meals out of it. I spent an additional $400 to buy what I needed but I ended up with 40 meals! The next 9 weeks are going to be instant pot cooking! (All meals not pictured)

I also make my own chicken broth using a rotisserie chicken.
My goal is to only spend $60/week to fill in sides for the meals. I’ll try to keep you posted on how it goes!

Same toppings- two meals at once. We’ve recently went dairy free at our house. This was our first dairy free pizza. Used a cashew based “cheese” I got from misfit market. We like chicken, spinach, and sausage for our toppings. Kids loved it! Took those same toppings and mixed it up with spaghetti squash and todays supper is now ready! (The kids won’t love this one 😝.

Doing a detox week! Photo lots of food is the detox we did 7 years ago. We are eating really good around here. Most of my recipes so far have been from Danielle walkers cookbook against all grain and healthy in a hurry. Cabbage soup was from Pinterest. No caffeine- no grains- no sugar. We feel great today (last two days where rough! 🤪)

Roasted butternut squash soup. This was a pantry/ fridge clean out. It’s so good. Roasted the veggies at 425 until soft. If you take the time to cut them in cubes it would go faster. Had some cherry tomatoes I needed to use so threw them in too. Once done add to stock pot and add milk of choice (I used up my half and half but heavy cream would be dreamy). Heat and serve. Top with cracked pepper.

1 butternut squash
1 sweet potato
Handful carrots
Handful of tomatoes
1 onion
Garlic (I didn’t have any but roasted in this would be amazing)
Roast at 425 until veggies are tender. Blend and add milk. About 1/2 cup

My husband headed to the store because he’s on supper duty tonight. Gluten is sneaky! It took me a min to find it but sure enough barley…. Reading labels is a very important part of being gluten free. (No shame if you mess up…just don’t eat it). Dylan and I have both missed something and we’ve been doing this for over 5 years.
What’s actually for supper tonight? He’s making canned mackerel patty for him and the kids. 😄.

Here’s what’s for lunch. I’ll add pepperoni and do a pizza type thing. We will also have a salad on the side. My kids can’t stand zucchini if they know about it but do like this.

We do a lot of chopped salads for lunch if we don’t have leftovers. I find that if I mix it all and chop it up my kids will eat it. I use whatever I have on hand but the kids love a Cobb salad with eggs, ham, and turkey. I also used cucumber and broccoli. Blue cheese for the adults.

So you just found out you or a family member is allergic/sensitive to gluten. Now what?!

This is where I’ll share all my secrets on how we as a family of 6 eat exclusively gluten free. I started the page Wonderfully Made Gluten Free Bakery and thought it would be helpful to have a separate page dedicated to tips only and no selling 😉. A treat every now and again is of course amazing but what should you do at home?! We as a family choose not to consume gluten, high fructose corn syrup, and artificial food dyes. The are our hard and fast nos. We also try to eat more Whole Foods and low sugar (it’s been tricky since I’ve been baking hehe). Hopefully you will be blessed by following along and I’d love to hold your hand as you start your journey.
