We spent a serene day with @kintousa, brewing a perfectly balanced Japanese Iced Coffee with their simple yet elegant brewing tools. Koatji Citrus Miso Caramel Latte Recipe Ingredients: Drink Size 16 oz Espresso 1 pull Koatji Milk 6 fl oz Miso Pistachio Caramel 36 grams Meyer Lemon Peel One peel Orange Peel One peel Whisked Koatji Milk 2 fl oz (there will be milk waste) Procedure Fill a cup 3⁄4 full with ice Use a Y-peeler to peel a strip of Meyer lemon and orange Mix caramel, Koatji milk, lemon peel, and orange peel with a few ice cubes in a cocktail shaker Shake aggressively for 10 seconds Pour mixture over ice Slowly pour espresso on top of the milk Add whisked Koatji milk on top - there will be milk waste Garnish top with pistachio shavings Citrus Miso Pistachio Caramel Batch size Approx 2/16 oz Size Beverages Sweet White Miso Paste 10g Smooth Pistachio Paste 14g Koatji Oat Milk 30g Cane Sugar 28g Salt 1 gram .2g Vanilla Extract 1g Procedure 1. Whisk together miso, pistachio paste, and Koatji milk 2. Strain ingredients through an ultra-fine mesh strainer 3. Heat up a pot and add the sugar 4. Let the sugar caramelize into a golden 5. Add the miso/pistachio milk little by little, stirring with a whisk 6. Once all the ingredients are added, remove from heat 7. Let the batch cool 8. Add vanilla extract and salt. Stir to incorporate 9. Place in a squeeze bottle and day dot
